  1. 1/4 cup lime juice
  2. 2 tablespoons canola oil
  3. 1 tablespoon white vinegar
  4. 1 teaspoon ground cumin
  5. 1/4 teaspoon salt
  6. 1 jalapeno, sliced
  7. 1 1/4 pounds boneless, skinless chicken breasts, trimmed of fat, tenders removed

2. Cooking Directions

  1. Whisk lime juice, oil, vinegar, cumin and salt in a small bowl. Stir in jalapeno. Place chicken in a shallow baking dish and pour the marinade over it, turning to coat both sides. Cover and refrigerate for at least 1 hour, turning once, or overnight.
  2. Preheat grill to high heat. Oil the grill rack (see Tip). Grill the chicken until cooked through and no longer pink in the middle, 3 to 4 minutes per side. Let cool slightly; thinly slice crosswise. Serve warm or chilled.

Yield: 8 servings

3. Still Hungry?

Tangy, mildly spicy and tender, this chicken is delicious with black beans and salsa.

Notes:

Tip

To oil a grill: Oil a folded paper towel, hold it with tongs and rub it over the rack. (Do not use cooking spray on a hot grill.) When grilling delicate foods like tofu and fish, it is helpful to spray the food with cooking spray.

Make Ahead Tip

Marinate chicken in the refrigerator for up to 1 day and/or refrigerate cooked chicken for up to 1 day. Slice just before serving.

    I made this for dinner last night, and I will be making it again! The flavor relative to how easy it is to make the marinade and cook the chicken makes this is a great recipe. I let it marinade over night, not just for the hour. I think this is the best way to do it, because it had just the right amount of flavor. An hour would not do it justice. The chicken came out quite tangy, and I loved the flavor. Even my husband, who is so picky he doesn't eat condiments, enjoyed the chicken. Next time, I will add some cilantro to it because it seems like it would be a nice complement.

    I like the sound of the chicken itself but the picture is a little decieving - can we have what else is in that wrap (mango salsa? guacemole?) because it looks tasty!

    I made this and added red onion, pineapples chunks, some chopped radish and salsa. Now its complete.

    I was just wondering why you think that it is safe to grill the chicken for only 3-4 minutes on each side. That does not even sound safe!~SueB
