  • more efficient technique

There\\'s no need to heat the shrimp, sauce, etc in microwave if the shrimp is already cooked and you are going to be baking it again anyway. You just set yourself up for the shrimp not being as tender.

  • Oooh Yum!

This is really yummy! I really like the use of shrimp as a nice change from using chicken so often in similar recipes! It is definitely a do again!

  • Quick, Good and So Easy

    Ann - September 14, 2007 08:32:58 PM PST
This was a really good idea for a Friday night. It was easy to prepare and not too many ingredients. I made a few minor modifications to suit my family. I used the whole bag of frozen corn and one wheat flour tortilla right on top. I made it three layer rather than one.

The biggest modifications was: I used red enchilada sauce on half of the pyrex pan and green on the other. The red one is little spicier. On the green side I used Monterey Jack Cheese and on the red side I used Mexican Mix (cheddar, monterey and queso). This gave my family an option because everyone has their own preferences. Also, my seven year old doesn\'t like to eat spicy foods and the green wasn\'t that spicy. All and all this was an excellent recipe to eat and prepare.

Give it a try, I\'m sure you will enjoy it too.

  • Just plain AWFUL!!!!!!!

    mastergator83 - December 5, 2007 08:59:10 PM PST
This has got to be one of the worst dishes ever!! My girlfriend and I are both Latinos and would rather eat from a roach coach than eat this slop. What a waste of shrimp. Even worse, what a waste of time!! The combination of shrimp and refried beans is awful. Everything was soggy and the dominating taste were the beans, chile and salsa. The shrimp were lost in this receipe. I suggest you lose this receipe as well. Don\'t mean to be rude but it\'s the truth!

  • desperately needs seasoning

    jonotn - March 29, 2008 09:24:47 AM PST
About as tasty as cream of wheat. Even onions don\'t do much but at least doesn\'t taste like mush. Would be ok/good if spiced up.

  • It is good but...

    jcandelario31419 - September 17, 2007 02:06:29 PM PST
It was easy and good but it is not very good when reheated. My husband did like it but had a few suggestions on how to make it better. It does taste good but my daughter did not like it at all. It had too much spice for her. It looks more like a casserole than enchiladas. I also used more than the amount listed for the sauce. I used 21 oz of green enchilada sauce. This recipe can use a little bit of help.

    My husbands suggestions were:
    1. wrap the filling in the tortillas.
    2. use a cheese as a kind of seal.
    3. a good layer of sauce both under and above the enchiladas with extra cheese on top.

  • Not a repeat

    aerobixqueen3 - May 5, 2009 07:08:30 PM PST
This recipe just did not go over well at all wtih my family. The layer of tortillas tasted like a thick crust, and the beans were very thick and unpleasant tasting. I picked out the shrimps and ate them alone. Not a repeat for us.

  • What a foul recipe

    croww9 - March 10, 2009 01:58:51 PM PST
The most disgusting dish I\\\'ve had in a long time. It ruined the taste of the shrimp and the corn tortillas. You start using that foul canned green enchilada sauce and you are in for a flop. Canned beans? Gimme a break. Canned beans and red or green enchilada sauce should be illegal to sell as they do not resemble the taste of real fresh sauces in the slightest. But then again, in the day and age I suppose you can roll or stack a pile of dog crap and call it an enchilada.

    Horse Listener - June 20, 2008 08:30:30 PM PST
I\'m 17, and I was thrilled when I came across this recipe. I asked my mom to buy the ingridents, and she agreeded and did so.

The smell was devine! But the taste, was..the opposite.

I suggest no one make this.

  • Not so delicious ,but ok

    Tatiana - May 19, 2008 04:38:48 PM PST
It\'s good enough to eat, but the beans don\'t mix with the shrimp so it had a odd flavor combination, the cilantro didn\'t even go with it. So it wasn\'t nasty and it wasn\'t delicious ,I wouldn\'t make it again.

  • Excellent

    whosyourlobster - April 22, 2008 01:39:24 PM PST
We loved it. It was a little to spicy for me but my husband found it to be outstanding. Looks like this will be regular dinner item for us. I recommend buying shrimp that is already cooked since it was a little time consuming cooking the shrimp and removing the shell and tail

  • Really great dish

    Brittany F - March 25, 2008 08:34:44 AM PST
I made this dish for my boyfriend, one of my friends and myself and we all really, really enjoyed it!! I paired it with a side of mexican rice and black beans, but honestly it was so filling I couldn\'t even eat all of my sides! I will definitely make this again.

  • Awesome

    lmoon2550 - February 6, 2008 04:36:59 AM PST
This was so good I am preparing it for a dinner party. The beans might be easier to spread if they are warm, but it was an easy recipe to put together. I used Chipotle Cheddar for the topping for a little more spiciness.

  • My family loved it.

    butterfly76@sbcglobal.net - January 31, 2008 03:55:23 PM PST
It was an eazy recipe. Instead of green salsa i used chile chipotles and a mixture of vegetables and fresh beans. It was a big hit in my home.

  • Try this sauce

    Jeff T - May 14, 2008 06:06:33 AM PST
Instead of green or red enchilada sauce, combine 1 jar Alfredo Sauce and 3/4 bunch of fresh cilantro, put into food processer or blender mix until blended, use remaining cilantro in the enchiladas, just give them a rough chop.

  • Super Impressed!!!

    Michelle - November 3, 2007 08:38:26 PM PST
Soooooo Good! I liked everything about this dish. Thought that it may be bland, but no way!!! You don\'t need anything else ( guac, salsa, sour cream) it\'s good the way it is. Something new for the person bored with your typical enchilada dish. Just grrrrrrrrreat!!!!

  • Needs a little tweaking

    Lauren W - March 30, 2008 11:02:09 AM PST
Contrary to the other reviews, I thought 12 tortillas worked just fine. If you like it starchier, just use an 8x11 dish instead - there\'s no sense adding more unnecessary calories. Even though the cheese and sauce are salty, I found that the middle layer was a bit bland - definitely needs a little salt and perhaps some cumin/chili powder to jazz it up.

  • WHAT THE HELL IS WRONG WITH YAHOO?

    classy_gent_310 - March 27, 2008 12:43:10 PM PST
On the one hand, Yahoo bombards their website with "HOW TO LOSE WEIGHT" articles and the like, and then they turn around and delve into how to cook up really fattening meals. Am I the only one that sees this most unhealthy and unabashed inconsistency, here?

    punkypiekid - January 12, 2008 04:29:28 PM PST
This was a total waste of my time and money. there were absolutely no likes to it. It was runny and the taste was just awful. We are a household who loves to eat hispanic food and seafood. So i thought this would be great, boy was i wrong. The picture doesn\'t even resemble the mess we were left with. Good Luck to whom ever tries this recipe, You\'ll need it.

  • Shrimp did not go well with the green salsa

    Judi - December 4, 2007 08:43:22 AM PST
My kids and I all love Mexican and we love shrimp, so I thought this would be a great recipe to try.

However, none of us liked how the shrimp and green salsa flavors went together--not at all.
