Mini Mushroom and Sausage Quiches

    I have a daycare and fixed this for their lunch. Instead of sausage/mushroom etc, I used ham, cheddar cheese and green onions. It was very good!

    I did this recipe for a group of friends and they loved it, I also changed some of the ingredents, did some with broccoli and cheese, some with ham, swiss,and some with turkey and american white cheese it was excellent. loved it.

    These things are fantastic. Rather than the pepper, I used about a tablespoon of Montreal Steak Seasoning (my ultimate solution for almost any dish) for the amounts in the recipe, and they came out GREAT!

    Delicious recipe - I\'m watching my fat and calories - so I have created a version that uses EggBeaters and I roast whatever veggies are seasonal.

    But the real trick of this recipe is I now use silicone muffin \'pans\'. You need to literally double the cooking time (for ex, I cook these quiches for 35-40 minutes at 350F). I spray the pans first with Pam (just to be sure) - and the quiches pop out without fail.

    I love this recipe and have used it for years with many variations. I wanted to write a review here b/c as a person that has skipped b-fast for YEARS this has been a lifesaver for me!!! I make a nice sized batch and then keep some in my fridge at home and some in the fridge at work. This way, I can ALWAYS have b-fast no matter WHAT the situation is!!

    This is a good base low-carb recipe that allows for tweaking with ingredient modifications. Good with hot sauce like Cholula or Sriracha.

    I made this with breakfast sausage and sharp cheddar cheese. I also added just a pinch of mustard....YUMMY!!! My family and I loved these!

    These are great breakfast starters, but it could be even more wonderful without extra, unnecessary fat calories! Cook mushrooms in non-stick olive oil cooking spray. Use ALL Egg-beaters (2 cups=8 eggs). And finally, using vegetarian sausage-style crumbles gives all the flavor, but 80% less fat! (And you don\\'t have to remove casings and mush around the fat and gristle of regular sausage.) These easy subs make it high protein, low fat, and a healthier start to the family day.

    To split hairs, this is not a "quiche". By definition, a quiche has a pastry crust. To be more accurate, this is closer to a miniature frittata.

    To mix it up, try chopped broccoli, ham, swiss cheese or other omelette-worthy ingredients.

    Same version in the cookbook. Still a super yummy high protien snack. Watch out, if the stick to the pan you will have a serious mess. I use muffin liners.

    They can explode because the eggs are beaten.They form little air pockets inside .If you\\\'re lucky,they\\\'ll blow up in the microwave. If you aren\\\'t (like I wasn\\\'t) they explode when you bite into them. I still have scabs on my lips 2 weeks later.

    Great recipe, but instead of using mushrooms/sausage/egg/cheese, I used peanuts, corn, pinto beans and tofu. It was fantastic!!!!

    This is for all you people that say how great the recipe is, yet swap out most of the main ingredients with something else.

    A kcal is actually one nutrionally calorie....which is equal to 1000 "calories". The calorie count on your menus is actually kcals not calories. 1 kcal is one nutritional calorie or 1000 calories. Most people don\\'t even know that so it doesn\\'t really matter. A kcal is what we know of as a "calorie". (The amount of heat required to raise the temp 1 degree celsius...I think..if I remember my chemisty properly.) Anyways...that is all it means!

    Instead of 5 eggs I only used 2. Then I substituted blueberries for the sausage and used sugar instead of cheese. A couple of tablespoons of butter folded in with just a touch of vanilla and a couple cups of flour made this quiche awesome! If you closed your eyes you would swear you were eating a light and airy sweet blueberry muffin. I will make this for my Boxing Day meal and possibly for my big May Day bash! Thanks Yahoo!
