Mushroom, Sausage and Spinach Lasagna

  • definitely worthy of needing some help

    while the lasagna recipe is great because it has my favorite lasagna additions--sausage, spinach and mushrooms--it seems a bit bland. there is no mention of any other herb than basil and no mention of seasoning other than the tomato, which is what is seasoned with basil. i can\'t imagine a lasagna without garlic! what about starting with some garlic and onions? i also think some thyme, rosemary, oregano, or sage, or a combination of sorts, would be an amazing addition to the sauce.

    i also think that the recipe is missing a few key steps, such as the meat should be browned first, then the mushrooms because they don\'t cook at the same time. also, onions should be used to start the sauce anyway. the list goes on. there are ways to improve upon this recipe without making it unhealthy. healthy food does not have to be bland!

    definitely a good start with the core concept of the lasagna, i.e. the sausage, spinach and mushrooms, but it definitely could use improvement.

    brown rice noodles are a more easily digestable healthy alternative as well. I recomend mixing fresh oregano with the cheese mixture for extra flavor and I have also used butternut squash slices in lasagna instead of meat and it has turned out wonderfully.

    The only change I made was adding red wine to the meat and to the sauce and substituting half portobello mushrooms and half cremini. I learned some valuable lasagna wisdom from the recipe; including using crushed tomatoes with fresh basil instead of Ragu and putting the cheese during the last 10 minutes. We really loved this!

    Made this for a few family members who were coming over to watch the Red Sox in the World Series and wanted something healthy and hearty. I couldn\'t find "spicy" turkey sausage at the grocery store (just "hot") and preferred to manage the level of hot myself, so I bought sweet turkey sausage. My husband isn\'t a fan of mushrooms, so I omitted those. I added a few good shakes of Mrs. Dash extra spicy seasoning and used whole wheat pasta. That was my only variation. I thought the amount of cheese was perfect and the dish tasty, not your typical overly heavy and calorie-laden lasagna. Calories per serving ended up being less as I cut it into 12 servings not 10. Next time (when I\'m making it for just my husband and myself), I\'ll add some dashes of Tabasco.

    Sench-Your absoutely right! This recipe needs garlic and onions. I would begin by sauting them, and then adding some basic spices, basil, oregano and thyme to it. I would omit the sausage and make it veggie. Yummy!

    Have made this three times, each time I\'ve gotten great reviews from my eaters. I made a few changes, mostly because I can\'t find spicy turkey Italian sausage, so I substituted some turkey kielbasa (diced and dry fried it separately before adding to mushroom/spinach mixture) and half spicy regular italian sausage. Also I whipped in two egg whites into the ricotta cheese, there\'s nothing like light fluffy ricotta in lasagna! Yeah, yea, I know, IT\'S NOT HEALTHY, but heck, I figure by using the low/non fat items for most of the ingredients I\'m still doing pretty good, especially when it turns out SO DANG GOOD! Peace.

    The recipe was a good place to atart, and you should stick with it if your worried about the calorie intake. But Ihad to add a bit more of everything, espcially the cheeses.
    Also I wouldnt mind a bit more veggies in it next time, or some large portabello\'s instead. Overall and excellent easy beginning.

    because under the TIPS section it suggests OMITTING the turkey sausage. No turkey sausage = no meat = veggie lovers delight..

    you could substitute eggplant sauteed slightly in olive oil, w/ garlic, basil & oregano (and maybe a dash of ground red pepper for some kick) instead of the meat too :)

  • Good, Fairly Easy Some Additional Tips

    The recipe was very simple and good but I did make a few changes. Instead of just mozarella, I used an Italian Shredded mix and also only sweet sausage as I was making it for children. I also used crushed tomatoes with Italian seasoning and then added extra italian seasoning to both the meat mixture and the tomatoes. Wheat noodles were a good tip. I also allowed it to set for 30 minutes before I baked it to let the flavors meld together:)

    I enjoyed this recipe, my only other comment is that u can skip boiling the pasta, instead, keep a bowl of warm water beside you and as ur assembling the dish, dip each piece of lasagna pasta into it before placing it in the dish. As long as the the lasagna is in the oven for a minimum of 1/2 an hr, the pasta will cook.

    YOU CAN MAKE IT WITH LESS CALORIES, BY USING ZUCHINNI SLICES IN PLACE OF NOODLES. SLICE ZUCHINNI THE LONG OR SHORT WAY, BLANCH IN HOT WATER FOR A FEW MIN. DRAIN AND LAYER AS YOU WOULD NOODLES. FOR MORE TASTE ADD GARLIC.

    Actually, it\\\'s not the egg whites that are bad for us -- this is the good part of the egg for everyone -- it\\\'s the yolks that can end up causing us harm if consumed in too plentiful an abundance... Try the Egg Beaters whites in little cartons -- they\\\'re actually very good and it\\\'s hard to even notice the yolks aren\\\'t there...

    Whenever I make a recipe (any recipe), I use the recipe itself as a guide in terms of measurements and ingredients, but I always taste-test to ensure the spices are as I like them, and I feel free to add things according to what I have on-hand and/or what spices/herbs I\\\'m in the mood for while cooking at that moment... I do like your ideas within this recipe -- sounds awesome and I will try them... The premise of this recipe is a sure-fire winner... :o)
