    If you are looking for a second close to old fashioned mashed pototes this is the way to go, less carbs and still a butter, yummy, tummy filler. I make these every year now in the DiGiampaolo home. I season mine with some salt, pepper, garlic, maybe a little something to dress up the dish and on the table they go. Just be careful it is a water packed veggie so dont let them get runny, cook well and drain well and these should be a delight.

    I tried cauliflower puree for the first time and this recipe is great! It tasted just like mashed potato but better and healthier too! I will make this recipe the next time hubby asks for mashers. I can\\'t wait to try the steamed spinach puree as another reviewer mentioned.

  • Hypoglycemic Alternative...with Flavour!

    I have to be careful of carbs, starches, and sugars, due to hypoglycemia. I make these now, but I use neufchatel (you can use cream cheese,) snipped chives, butter and a bit of crumbled cooked bacon for more flavour and creaminess! We have also tried this with drained, steamed, chopped spinach, cottage cheese, and garlic lightly sauteed in butter. The variations are endless...

    You can\'t eat REAL mashed potatoes once or twice a year?! Healthy alternative? If I served cauliflower disguised as mashed potatoes my mother-in-law would tar and feather me and I\'d never hear the end of it! Besides, bleech... sorry...
