    i had to do a recipe on a country my teacher assigned me and i picked this recipe out because i thought it was just easy. little did i know, this recipe is quite yummy! its not meat satisfying good, but this dish is great for tofu lovers. you should try out this recipe too. its not too difficult to make either!

    The curry sauce tastes excellent, though I didn\'t use the cilantro or brown sugar. I couldn\'t find light coconut milk at the store, so I used the full-strength stuff. I used a little more than a teaspoon of the red curry paste, and next time I make it I will probably use even more, since I love the flavor. You may want to add more sugar and salt, as I found myself salting the dish and adding a little Splenda (a third of a packet maybe, not too much) as I ate it, which enhanced the taste considerably.

    This recipe was so amazingly simple and I thought that it was so sweet! I omitted the curry paste because I didn\'t have any but everything else I followed according to the recipe. It only took about 20 minutes to make surprisingly plus, there really wasn\'t a whole ton to clean up. Great for during the week.

    The coconut milk takes away from the curry paste.. next time I will substitute the milk with something else. Does anyone have any suggestions on a good substitute?

    I was expecting more kick. This is pretty bland, even for my midwestern palate. Still, it was easy to make and very good - just needs more spices, something that\\'s easy to fix.

    This is my first time making curry from scratch and it turned out great!
    I added a few veggies and some spices, ect as well.

    Carrots, Onion, Potato, Garlic, and Zucchini are all good choices!
    For spices I added cardamon, cumin, ginger, coriander, lemon grass, tumeric and cinnamon.

    Two other great additions are soy sauce

    I had thai curry before, but mine had beef and shrimp in it, it was called thai red curry. If theres no meat, this meal will never fill me up, I understand its healthy for you, but its just not for me.

    This recipe is delicious! Instead of using the lite coconut milk, I lowered the fat content by substituting 1 cup of fat-free half and half with 1/4 tsp. of coconut extract (you can adjust the amount of extract, depending on how strong of a flavor you want).

    I\'m not sure if someone with a more sophisticated palate would notice the difference, but I thought it was an amazingly healthy way to enjoy the dish.

    This was really easy to make and super yummy - it can also be made with Curry Powder (easy to find at almost any grocery store- I found it in Puerto Rico so have faith!) takes a little more than a tsp though - so I reccommend adding and tasting. Another good addition - if you like it spicy - is red Indian spice (don\'t know name of it) but be careful it is REALLY spicy. AND wash hands thouroughly after touching or your eyes, lips, etc. will be as they say - AFIRE!

    I really enjoyed making this! It was super easy and delicious! I had to add more oil to brown the tofu, but I made sure to drain the extra oil before I added all the other ingredients! I added baby corn and mushrooms to it....FANTASTIC!!! It is a great recipe and I will be using it again and again!
