  1. 3/4 cup reduced-sodium chicken broth, divided
  2. 2 teaspoons cornstarch
  3. 2 teaspoons canola oil
  4. 4 (4 ounce) boneless pork chops, 1/2 inch thick, trimmed of fat
  5. 1 small onion, sliced
  6. 1 tart apple, such as Granny Smith, peeled and sliced
  7. 1/4 cup apple cider or apple juice
  8. 2 teaspoons Dijon mustard
  9. 1/4 teaspoon dried thyme

2. Cooking Directions

  1. Mix 2 tablespoons broth and cornstarch in a small bowl.
  2. Heat oil in a large nonstick skillet over high heat. Add chops and cook until browned, 2 to 3 minutes per side. Transfer to a plate.
  3. Reduce heat to medium-high and add onion to the pan. Cook, stirring often, until it starts to soften and brown, 2 to 3 minutes. Add apple and cook, stirring often, until tender, 3 to 5 minutes. Stir in the remaining broth, cider (or juice), mustard, thyme and the cornstarch mixture. Bring to a boil, stirring, until thickened and glossy, about 1 minute. Return the chops to the pan and heat through. Serve immediately.

Yield: 4 servings

    I have not made this recipe, but it sounded good and I was reading through the instructions. Am I missing something here? It says to brown 2-3 minutes each side, and then set them aside. Other than putting them back in the pan with the apples and onions to warm them through, there is no additional cooking time. That sounds like very UNdercooked pork to me.

  • Take the temperature

    These are pretty thin chops and are probably done after the original cooking. Most people overcook pork chops because they were taught that way. The recipe does say to return them to the pan and heat thoroughly which will kill any bacteria. When cooking meat, it is always best to take its temperature to make sure it is cooked properly anyway.

    Everyone seems to think under cooked pork is bad...when in fact it is best medium to medium well, I have been eating it this way for many years and I am 49, never had a problem....buy quality pork and enjoy it........

    I struggled with the taste.....I really was waiting for it too pop, but it didn\\'t. I\\'m glad I tried it but I doubt I would ever make it again.
