  3. 1/4 cup chopped scallions
  4. 1/4 cup coarsely chopped fresh parsley
  5. 1/4 cup Kalamata olives, pitted and coarsely chopped
  6. 2 tablespoons extra-virgin olive oil
  7. 1 tablespoon white-wine vinegar
  8. 1/4 teaspoon salt, or to taste
  9. Freshly ground pepper to taste

Cooking Directions

    Mediterranean - no feta?
    Do not use salt add some feta cheese instead.

    All the ingredients are ok, except I would change the Vinegar for Lemon Juice.

    I went to a restaurant and they start everyone off with a salad like this.... the only difference? they added fried pita chips... OMG the textures and flavors we excellent.

    It really wasnt that good with my family. But it was ok to me so I would tell a friend to copy this recipe
