What do you really expect from a 15 minute food guide ? Obviously there are going to be shortcuts to get that time. I do agree that it should be labeled Mexican-inspired dishes or something.

I am unaware of the version from Spain, but even in Mexico this drink is made from whole grain rice that has soaked overnight, condensed milk, and real cinnamon sticks. Many of these recipes are not authentic food.

It makes me laugh to see the responses to these recipes, Mexican food has ALOT of different "varieties" of the same dish or drink. So it really depends on what part of Mexico you are having the horchata. My grandma made her horchata with NO milk, some people used condensed milk, others use whole milk. Passing judgement on people by the vocabulary they use is childish, horchata is good no matter how you make it.

The Horchata in Spain is made with a tuber called "chufa" (http://en.wikipedia.org/wiki/Cyperus_esculentus); not made with rize, nor anything.
La horchata española se hace con chufas, no con arroz, ni con ningún otro cereal. Parece que el que creó la receta confundió Tijuana con Valencia, y eso que están separadas por el Océano Atlántico.

The comment about this not being authentic is exacly right. Lots of us love the taste or horchata and dont wanna spend 3 weeks soaking rice and what not!! I have tried this and its fantastic!!!!!! Take a chill. If you dont like quick recipes look for AUTHENTIC recipes!!!!!

If you go to Mexico City there is no such thing as a Burrito or a Taco Pie. Where do they get these people who write this stuff? A Cheesy Salsa Dip???
I\'ll give them credit they did get a few of them correct. You can not go to any Mexican restaurant or home and not find a good Fresh Tomato Salsa it could be a green or red salsa but they usually have one or both of them!
Mole you have to have Mole!!! Its a great Mexican dish. Shrimp ceviche and Guacamole. Thats about the only Authentic Mexican dishes here...

these may be Mexican-inspired and although u gotta give the people who write this stuff some credit, you just shouldn\'t get away with calling something Mexican when many of these recipes taste nothing like the real thing. My biggect peeve is that people will see these recipes and get a misconception of what MEXICAN food really is. We do not like spice or chiles in every single dish and if you look at most Mexican dishes cumin and other "spice substitutes" ruin the dish. Same thing goes for Taco Bell. If you want the authentic taste you will have to sacrifice the time or visit Mexico...

Honestly, I do not understand why others seems so offended by this article. Many of you are Hispanic and seem to be very biased and judgemental of what is supposed to be a simple, fun take on a very involved Hispanic treat.
Why don\'t you all just recognize that it is nice that other people are trying to get a taste of your culture rather than insult them for trying.
After all, why would someone spend hours soaking rice and preparing a drink if they don\'t know if they are even going to like it? Think first, please.

So all these people taking their time to "bag" on this recipe well understand that in the recipe there is nowhere indicated that states this is an AUTHENTIC recipe it is simple the "white man\\'s" way of making frozen horchata lol so hey guys get a life and comment on things that are more interesting

I live in a large hispanic community here in California and authentic is whatever you have avail.
If it tastes good, then why complain?
Not all hispanics can cook anyways... be lucky there is food on the table.

Yes, I agree. I think alot of people are not aware of how unauthentic these recipes are. I\'m sure they are very tasty, but nothing compares to the REAL thing!!!

This type of horchata is not from Spain. The horchata is typical and very refreshing drink from Valencia, a region in East Spain. It is prepared with "chufas", which are nut-like tubers. In the United States, they are used attract wild turkeys, but are not known as a food for human consumption. I have tried the so called horchata from rice, and it is not the same at all as the real horchata. Since chufas originate from Europe, most probably the use of rice has been used in the old times as a substitute, and with time has become so common that the use of the chufas has been lost. There is no substitute for the real drink. It is served very cold and in some places in Spain, with the same texture as a frozen Margarita. The drink is made with chufas, water, and sugar and it tastes like something in between coconut and vainilla with a hint of cinnamon.
