Pamper your guests with this pretty, elegant dessert--no one will ever guess that it easily conforms to any healthy weight-loss regime. A fluffy meringue creates a sublime texture, while just a little real whipped cream delivers velvety richness. Straining the raspberries is a labor of love (consider delegating this task), but all the work is done well ahead and the results are absolutely worth the effort, guaranteed.

Substituting with Splenda(R): In the EatingWell Test Kitchen, sucralose is the only alternative sweetener we test with when we feel the option is appropriate. For non baking recipes, we use Splenda(R) Granular (boxed, not in a packet). For baking, we use Splenda(R) Sugar Blend for Baking, a mix of sugar and sucralose. It can be substituted in recipes (1/2 cup of the blend for each 1 cup of sugar) to reduce sugar calories by half while maintaining some of the baking properties of sugar. If you make a similar blend with half sugar and half Splenda(R) Granular, substitute this homemade mixture cup for cup. Dried egg whites are pasteurized so this product is a wise choice in dishes that call for an uncooked meringue. They are also convenient in recipes calling for egg whites because there is no waste. Look for brands like Just Whites in the baking or natural foods section of most supermarkets. Dried egg whites can be ordered from The King Arthur Flour Bakers Catalogue. A stand up mixer makes beating egg whites easier, but a hand held electric mixer will work fine.

The recipe sounds OK, but this sentence really jumped out:
"Straining the raspberries is a labor of love (consider delegating this task)". If you are making it yourself, then delegate it to whom? A family member or friend who won\\'t mind being given the less pleasant task while you get the fun part? Sorry, either this is for professional chefs with a staff of their own, or someone with an outsize ego.
