Molho campanha is a salsa-like sauce served as an accompaniment to churrasco (barbecued meats) in churrascarias, Brazilian barbecued-meat restaurants. Since hearts of palm show up at every salad bar in these restaurants, we've added them to the sauce to give it a tasty twist.
Broiling variation
Instead of grilling, in Step 1 position oven rack 6 inches from the heat source and preheat broiler. In Step 4, cook steak on a broiler pan under the broiler until medium-rare, turning once, about 10 minutes total.
As a Brazilian, from south, where the churrasco is really originary from (thanks to our neighbors Argentina and Uruguay), the REAL CHURRASCO is not made with the mix of jalapeno peppers. Don\\'t try to create a recipe with your favorites TEX MEX and tell me this is Brazilian bbq, because is not.
Brazilian bbq is very simple: red meat (usualy filet mignon, tri tip, sirloin, top sirloin), salt and fire. NOT GRILL. The meat is cooked directly in fire. Thanks to the italian and german mix of culture in south of Brazil, more kinds of meat were incorporated, such as chicken and pork.
We don\\'t use sauce in our bbq. Not pepper, not cilantro, not tex mex stuff.

Having lived in Brazil for five years, I\\'ve prepared my own churrascos, and visited many Brasilian homes and restaurants or churrascarias. Brasilians do not add all that American junk. It\\'s meat and salt/pepper grilled IN the fire not over it and never broiled. To get a good churrasco flavor, lose all the extra American additives to get the real flavor of any meat. The secret is a good rub of the salt

This is not close to Brazilian churrasco. Americans always trying to put too much stuff together that loses the flavor of the real meal. Please don\\'t try this recipe if you want real Brazilian churrasco..and the molho campanha is wrong too.
