    I'm hispanic and my father's family came over to the US to New Mexico even before it was a state, so I know a thing or two of authentic Mexican food. This doesn't even come freaking CLOSE! This has to be one of the nastiest recipes I've read in a long time. Everything was doing okay until we started to add sugar (?) and vinegar (!), not to mention the tomato sauce and all the other junk. This is just plain ol' yucky. 73 ground beef well drained cooked with comino (cumin), oregano, corriander, yellow onion, and garlic put into a corn tortilla (those pre-packaged taco shells are horrific!) topped with mild cheddar or COLBY cheese!, tomatoes, and avocado. Plain, simple, takes about 20 minutes to cook everything. Notice no sugar, salt, etc.

    Cooking with all this extra sugar makes people want sweet foods and is a lot less healthy for you.

    Be sure to select taco shells with corn oil, and not partially hydrogenated oils. Some taco shells are loaded with trans fat!

    People, who even said this was supposed to be a healthy nutritional meal. This recipe was provided under the category of Most Popular, not Most Health for you. What do you expect from a meal that has cheese, sour cream, shells cooked in oil, and ground beef.

    What they mean is that it servs 4 (persons) yeilds 8 tacos, they are assuming that a person will eat 2 tacos each, therefore determining the serving size! whatever you were thinking it makes 8 tacos, no matter how many people are eating!!

    Tacos are not known to be healthy. So why say this meal isn't healthy. So think before you say something. And anyways. The recipe was great.

    Thanks to all the people who wrote about how this recipe was not authentic. If I wanted to make the same damn tacos I make all the time, I wouldn't be here reading this recipe. I'm willing to try something different. I may or may not like it but at least I am willing to try. How else will you know? If you can read the ingredients of a recipe and know exaclty how it is going to taste, you should be a professional chef. Stop wasting your talent slamming others efforts and start submitting your own recipes so we can all be better people.

    These tacos were good but a little watery. Next time I'll drain the fat off after cooking the meat. This will concentrate the flavors and also reduce the fat.

    Garlic cloves, Chili powder, Cumin ..... CUMIN?????, Coriander, Chicken broth, Brown sugar???, and Vinegar.
    Why don't you just add some Kool-aid and Cottage cheese too.
    No wonder this country is full of Lard "donkeys"

    Look... there is nothing healthy about a Taco. It's a special treat. But do it right. I'll forgive the garlic, but the rest is just a waste of time.

    It's simple. Plain Corn tortillas and shred some seasoned beef. Place beef in corn tortilla, fold over and toothpick shut. Now DEEP FRY until slightly crisp. Remove toothpicks, open and put some lettuce, tomato and cheese and you should find your own favorite Salsa or hot sauce to put on them. It's an art. Practice until you get it right.

    2nd choice: Just fry your own Taco shells, using real corn tortillas. They make a "template" so you can deep fry a few at a time. Put in meat and the rest when shells are done. Store bought Taco shells SUCK!

    You don't need all that nonsense. Just the basics, and the ability to season your meat right and find the right Sauce. Frying is the trick that makes them taste good and yes, also makes them fattening. Don't do it often, and I don't see any problems.

    By the way, I can eat 8 Tacos by myself, if they're good. My weight is very near normal. I could lose 10-15 lbs.

    Also, I could care less about authentic. Authentic tacos are really tiny burritos made with corn tortillas, but the ingredients in this recipe are ridiculous. Why don't they just throw in some Octopus, Red wine and some Pasta too?

    This actually sounds more like a taquito recipe. Roll them up in corn tortillas and this would be.. The following is a real taco:

    While a significant other prepares:
    Bowl of finally shredded lettuce
    Bowl of grated cheddar cheese
    Bowl of onions
    Bowl of tomatoes
    Pan full of ground beef browned and drained
    You prepare:
    Hot oil in shallow pan, using tongs, cook you own damn shells from Mission or better tortillas, shape like a taco, drain. I like them crunchy.
    Take a plate: Put ground beef, cheese, lettuce, tomato, onions. Add whatever topping you like. I make my own Serrano hot sauce, sour cream. Eat and enjoy. 20 minutes.

  • Way to increase nutrition

    I loved this recipe. I did use green and red leaf lettuce in place of the iceberg, as these types of lettuce have more nutrients than iceberg. I also replaced the beef with a mixture of pork and white meat chicken. I pay more attention to the nutritional value of food, as well as fats, carbs, etc. I try to adhere to the food pyramid as much as possible and just adjust my calorie intake. I love the recipes from your site because they are very easy to adjust to fit a persons diet.

    i like tacos but do i necessarily have to buy all the spices separately? i just can't buy a taco spice mix. if i bought everything on this list i would be $50 poorer.

    'Elusive' is right on the button!!!

    Lean ground beef, comino (cumin), fresh cilantro, chopped onion and grated garlic, and maybe couple of slices of green pepper (or jalapenyo, if you like it hot). Top your taco off with lettuce, tomato, grated cheese and a slice of avocado... I am from San Antonio, originally, and that's how my Mom made them!

    You can use shredded roast beef, left over or made just for this meal. I will put an inexpensive roast in the slow cooker with 1/4 c red wine vinegar, bay leaf, onion and garlic in the morning. I shred it while i am making the side dishes. I fry the taco shell with the meat and cheese inside. Use good corn tortillas, try to avoid mission brand, they use peanut oil or something. They have a off flavor. I only use a small amount of oil in the saute pan, just about 1/2c, and cook the tortillas till they hold their shape.

    The best tacos are the ones with the simplest spices
    Ground beef
    New Mexico Chili Powder
    Garlic Salt
    Onions
    then add all the toppings you want.

    These are not Taco's! Since when do you add vinegar and sugar to Tacos. I too am Mexican, and these are NOT Tacos.

    Pre-made shells. NO! Simply make them yourself using tongs a pan and oil.

    Filling: Brown the meat, add some onion, chile powder, salt, a little broth, simmer top with longhorn cheese, sliced thin lettuce, radishes and homemade salsa.

    Salsa: Boil tomatoes, jalapenos, onion till soft, blend in the blender with a few garlic cloves, add chopped cilantro and salt.

    Now, that's a taco!

    Maybe because the recipe does not direct you to drain the fat after the beef is browned. And it does seem much more complicated than necessary. Tacos are generaly pretty simple.

    This is a simple recipe? How many ingredients do you need for something as simply good as tacos? Sugar? First, better to use ground turkey with simple spices. Then, skip those horrible preformed tortilla shells and get fresh corn tortillas. Fry them in olive oil, about 10 sec. on each side--so much better.

  • Nutritional info severely flawed in every recipe from Cooks Illustrated

    The folks at Cooks Illustrated need only to look on a box of crackers or cereal to understand what needs to be included in their nutritional info. When you don't state the serving size, all other info is meaningless. And it allows them to make false claims. And what about the sodium content? Somebody needs a brush up course in how to do the nutritional calculations.

    It is true.

    This is NOT authentic mexican food. But if we make it the way Mexicans do and eat it, over time we will look like Mexican people once they hit 30. Think about the Mexicans you know who are over 30.

    Extremely fat, extremely ugly, and oh so slow.

    Don't get mad at me - we ALL know this is true.

    If you want to change it, stop eating "AUTHENTIC" mexican food.

    Again, look around...it will make you say hhhhmmmmmm.

    Your'e probable going to mention J-Lo, Mark Anthony, Geraldo, and Antonio Banderas. They wised up, made some money and got trainers to get rid of all of that lard on their bodies.
