1. Ingredients

  1. 4 boneless skinless chicken breast halves
  2. 1 (16 ounce) bottle Italian salad dressing or dressing of your choice
  3. 1 (8 ounce) bag field greens
  4. 1 pound cherry tomatoes
  5. 1 (11 ounce) can corn

2. Cooking Directions

  1. Place chicken breasts in casserole dish and pour half of the bottle of dressing on to the chicken.
  2. Place in a 425 degree F oven for 25 minutes.
  3. Mix remaining ingredients to make salad and toss in the remaining dressing.
  4. Serve warm chicken along side or on top of salad.

Yield: 4 servings

    This recipe is really great grilled as well. I put chicken filets in the middle of a medium sized piece of foil (with veggies of choice- I use green and red peppers as well as cubed potatoes). Wrap the foil up and grill for 15-20 minutes. You have the entire meal cooked, with no mess!
