Individual baked pumpkins. Make one for every guest, festive and tasty. Originally submitted to ThanksgivingRecipe.com.
You may certainly try to eat the outside and the stem if you wish, but it will not be good. Both are tough and dry.
Also, don't forget to save the seeds! Get the stringy insides off of them, place in salt water overnight and bake on a greased cookie sheet for 5 minutes or so in a 425 degree oven until lightly browned and crisp. Pumpkin seeds are very similar to sunflower seeds and you don't usually eat the outsides of them either.

After you have cleaned the pumpkin (before baking) Stuff it with the following then bake as directed except increase the time to 50 mins.
In a bowl combine bulk sweet or hot sausage, 1 cup of cooked white rice,1 egg, 1 small chopped onion, 1 small can of chopped tomatoes drained and your favorite seasonings. It is delicious!

It really sounds like a fun fall treat for kids. The question I have is, do you eat the whole thing? or do you eat the inside only?

I have worked with fresh pumpkin before. take out the seeds and toast for the grandkids/kids. then prepare as stated. just scoop out the inside to eat. or something else to try, prepare like acorn squash, split in half and cook face down. serve with honey or butter.
i am going to do both versions for my grandaughters this season.
