1. Ingredients

  1. 2 tablespoons olive oil, divided
  2. 1 large onion, halved and thinly sliced
  3. 4 pork loin chops, 1 inch thick
  4. salt to taste
  5. black pepper to taste
  6. garlic powder to taste
  7. 1/2 pint red grape tomatoes, halved
  8. 1/2 pint yellow grape tomatoes, halved
  9. 3 cloves garlic, diced
  10. 1 tablespoon dried basil
  11. 2 1/2 teaspoons balsamic vinegar
  12. 4 ounces feta cheese, crumbled

2. Cooking Directions

  1. Heat 1 tablespoon oil in a skillet over medium heat. Stir in the onion and cook until golden brown. Set aside.
  2. Heat 1/2 tablespoon oil in the skillet. Season pork chops with salt, pepper, and garlic powder, and place in the skillet. Cook to desired doneness. Set aside and keep warm.
  3. Heat remaining oil in the skillet. Return onions to skillet, and stir in tomatoes, garlic, and basil. Cook and stir about 3 minutes, until tomatoes are tender. Mix in balsamic vinegar, and season with salt and pepper. Top chops with the onion and tomato mixture, and sprinkle with feta cheese to serve.

Yield: 4 servings

You will not be disappointed with this wonderful pork chop. It is tender, moist, and full of fresh flavors. I serve with garlic mashed potatoes and asparagus. It's a favorite in our household.

    This recipe was awesome!!! I used a little less Feta cheese and it was marvleous!!! This is difinitely a keeper!! If you have leftovers the flavors get better. What a unique and delicious change from the regular fried pork chops. YUMMY!!

    I didnt have all of the ingredients either! So I just used some itialian dressing as the oil, vinager, and onions which was in the ingredient on the back of the bottle. Really Turned out Great!

    thank you ..i didn't have all the ingredients i needed but i managed to put most of the ingredients together,sliced the pork chops off of the bones after cooking them according to your directions and put everything together over seasoned fried potatoes and now the wife wants to retire herself from the kitchen ! god bless ..thanks again.

    I made this last night, but didn't have all the ingredients, so I had to get creative. I used half an old sweet onion that had been rattling around the crisper for a while and a roma tomato instead of the grape tomatoes (I only made up a half-recipe). Instead of the feta, I used crumbled goat cheese, which my husband loved. This recipe came out beautifully, until I accidentally dumped half a container of basil, but it still tasted great, even if there was just a touch too much basil (I managed to fish out most of it). I highly recommend this one, and it's easy, too!
