1. Ingredients

  1. 1 (5 1/2 pound) corned beef brisket with spice packet
  2. 7 small potatoes, peeled and diced
  3. 4 carrots, peeled and diced
  4. 3 cloves garlic, chopped
  5. 1 medium onion, diced

2. Cooking Directions

  1. Preheat the oven to 300 degrees F (150 degrees C).
  2. Place the brisket in the center of a roasting pan. Arrange the potatoes and carrots around the sides. Place the onion and garlic on top of the roast, and season with salt and pepper. Empty the seasoning packet over the roast, and pour enough water into the pan to almost cover the potatoes. Cover with a lid or heavy aluminum foil.
  3. Roast for 5 to 6 hours in the preheated oven, until the roast is so tender it can be flaked apart with a fork.

Yield: 8 servings

    This is a simple recipe and is sooooooooooo tasty. My family has always had a thing for corned beef, but, they are truely in love with this recipe.. You can throw some cabbage in towards the last hour...Helps keep the house warm and the fragrence make them hungry when they come thru the door...

    It is a lot easier adding all ingredients in a crock pot for 6-7 hours,and not get the whole house hot!

    Does it take 2 hours to cook like it says at the top or 5-6 hours as stated in the directions? And how can you feed 8 people with 7 small potatos?

    Made it yesterday for my dear family,they truly enjoyed it soooo much,i made a little change,i put in a few chopped celery (stalks leaves)and it did make a difference.yumm,yummmm.thanks for the recipe.
