Ingredients

  1. 1/4 cup butter
  2. 1 small onion, chopped
  3. 1 1/2 cups shredded Cheddar cheese
  4. 1 (12 ounce) can sliced mushrooms
  5. 1 (6 ounce) can sliced black olives
  6. chopped cooked ham (optional)
  7. sliced jalapeno peppers (optional)
  8. 12 eggs, scrambled
  9. 1/2 cup milk
  10. 1/2 teaspoon salt and pepper, to taste

Cooking Directions

  1. Preheat oven to 400 degrees F (205 degrees C). Grease a 9x13 inch baking dish.
  2. Melt the butter in a skillet over medium heat, and cook the onion until tender.
  3. Spread Cheddar cheese in the bottom of the prepared baking dish. Layer with mushrooms, olives, sauteed onion, ham, and jalapeno peppers. In a bowl, scramble eggs together with milk, and season with salt and pepper. Pour egg mixture over ingredients, but do not stir.
  4. Bake, uncovered, in the preheated oven for 30 minutes, or until no longer runny in the center and slightly brown on top. Allow to cool slightly, then cut into squares and serve.

Yield: 8 servings

3. Still Hungry?

Scrambled eggs with mushrooms, olives, ham, jalapenos, and Cheddar cheese, baked until firm, then cut into individual square portions. Great for a holiday brunch with sausage, and easily adapted with your favorite ingredients.

    i used to make this years ago...lost the recipe. so happy to find it again. thanx!!!! it really is WONDERFUL! breakfast for 12 in 1 baking dish.

    instead of pie dish pour into muffin dish. great size for bisquit sandwiches
