This cake was easy to make. It was nice and sweet and had a pleasant flavor. It is very moist--too moist it was almost gooey. I tested it for doneness with a toothpick. It did fall some as it cooled. I chopped the apple into one-quarter inch pieces, not big chunks.

My husband and I really liked this cake. I substituted the 1 cup of oil with 1/2 cup oil and 1/2 cup of apple sauce and it tasted great with good consistency. This would even make a great coffee cake and could be served with breakfast or brunch.
