This is a fresh variation on an old classic. Egg salad is spiced up with fresh cilantro and mushrooms as well as the usual ingredients. Great for a spring or summertime meal, or just as lunch to take to work!
Try it with a little jalapeno pepper with the cilantro. Its fabulous

The recipe doesn't sound bad, but I don't need the thought of mushrooms.

Quite frankly, this was a culinary train wreck of flavors. The mushrooms, eggs, celery, lime, and cilantro I think were the main culprits. The other ingredients were good though.

I have had this dish with large prawn, and it takes the meal to a whole new level!
