1. Ingredients

  1. 2 skinless, boneless chicken breast halves - chopped
  2. 2 tablespoons vegetable oil
  3. 1 teaspoon cayenne pepper, or to taste
  4. 1 (12 ounce) package corn tortilla chips, or as needed
  5. 1 (8 ounce) package shredded Mexican-style cheese blend
  6. 1 (7 ounce) can diced green chilies, drained

2. Cooking Directions

  1. In a medium bowl, stir together the chicken, vegetable oil, and cayenne pepper. Let stand for 15 minutes, or longer if desired.
  2. Heat a skillet over medium-high heat. Add the chicken mixture, and fry until chicken is no longer pink. Remove from heat, and set aside.
  3. Preheat the oven to 325 degrees F (165 degrees C). Spread a thin layer of tortilla chips in a 9x13 inch baking dish. Sprinkle 1/4 of the chicken, 1/4 of the chilies, and 1/4 of the cheese over the chips. Repeat layers ending with cheese on the top.
  4. Bake for 15 to 20 minutes in the preheated oven, until the cheese is melted and everything is heated through. Serve with your favorite nacho toppings.

Yield: 6 servings

3. Still Hungry?

Super-simple but totally killer nachos! These chicken nachos are made with tortilla chips layered with seasoned chicken, green chilies and cheese. They are to die for with some guacamole, sour cream and salsa. If it's too spicy for you, just leave out the cayenne.

    This was an easy and delicious dinner for two of us.

    I replaced the chilies with diced jalapenos for a slight kick.

    I want to try this again but use ground beef instead of chicken.

    Very good!

    Never thought I could make nachos at home, but this recipe makes it possible!

    I added a few things that weren't in the recipe:
    -sprayed PAM on bottom of the pan before layering
    -baked nachos with white onion
    -after the 1st layer of chips added a can of refried beans as a layer
    -Used Embasa salsa verde instead of the diced chilis
    -Had cilantro, salsa, and guacamole on table to add on top
    -Used skim mexican cheese blend

    The nachos tasted delicious. Next time I'm thinking of baking them longer so the chips are crispier.

  • Great Nachos, little change but still great

    Well at first its was confusing how to layer the nachos in the oven but instead I baked the chicken and cheese in the oven in a deep glass dish and when it was finish I poured the cheese and chicken on some nacho chips, Very good Nachos, Try with Sour Creme Gaucamole on the side.

    This is dry and needs alot of something. All the good things that go with nachos. Guac/sour cream, salsa, green onions and lettuce. It just needs the add ons. It's okay...but I'm busting it down for the spam. Unless your in Haiwaii you don't need the spam.
