Ingredients

  1. 1 egg
  2. 1/2 cup vegetable oil
  3. 1 cup white sugar
  4. 1 cup grated zucchini
  5. 1/2 teaspoon vanilla extract
  6. 1 1/2 cups all-purpose flour
  7. 1/2 teaspoon baking powder
  8. 1 teaspoon baking soda
  9. 1/2 teaspoon salt
  10. 3/4 teaspoon ground cinnamon
  11. 1/2 teaspoon ground nutmeg
  12. 1/2 cup flaked coconut
  13. 1/2 cup chopped walnuts
  14. 1/2 cup currants

Cooking Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease one 9x5x3 inch loaf pan.
  2. In small pan boil one cup water. Add currants or raisins, and boil for two minutes. Drain.
  3. In mixing bowl beat egg, oil, and sugar. Stir in zucchini and vanilla.
  4. In another bowl, measure flour, baking powder, soda, salt, cinnamon, nutmeg, coconut, walnuts, and currants or raisins. Stir to combine thoroughly. Pour all at once over batter in mixing bowl. Stir to moisten. Turn into greased 9x5x3 inch loaf pan.
  5. Bake at 350 degrees F (175 degrees C) for 1 hour until an inserted toothpick comes out clean. Cool in pan 10 minutes. Turn out on rack. Cool and wrap.

Yield: 12 servings

All the standard ingredients are here, including cinnamon, raisins and nuts. But a scoop of coconut and a whisper of nutmeg impart a rich, delicious aspect to this special loaf.

    It appears crimsonheart hasn't even made the recipe!! How can someone do that?!! Someone took the time and effort to post a recipe (that is just fine with its ingredients) and then someone who won't cook it to even get to eating it (trying it) rates it?!!! Pleaaaasse! HAVEN'T YOU EVER HEARD OF ZUCCHINI BREAD?!!

    As for crimsonheart - there is one in every crowd
    but the zucchini loaf sounds really good
    i made both the pineapple zucchini and pumpkin loaves for years now
    can't wait to try the zucchini coconut loaf recipe

    Ok, so there's this critic and their name is crimsonheart33 and they were stupid enough to show their ignorance to everyone on yahoo food, because that's the only explanation any of us can think of as to why someone would rate a food they've never tried. But on a good note at least we'll never have to look up the meaning of ingnorant because we all now know it's definition is CRIMSONHEART33! Now as for the recipe----it's excellent!! Everytime I've made it, it doesn't last through the day! People have made it very clear to me that if I don't make any for them when I'm making it for my family, they will be deeply offended. So we make it in bulk!!!!

    This is a great combination. I bet putting carrots in carrot cake shocked the uneducated too, decades ago.

    I've made zucchini- pineapple bread. And yes, the uneducated wouldn't even try it when I told them what it was. But it is delicious. Anyone tasting it without knowing the name loved it. This zucchini-coconut recipe sounds awesome! I can't wait to try it.
