This recipie is so good. I used black beans instead of refried beans, and added taco seasoning to the meat. This will be a staple in my house!

This was a big hit at my house. I made this recipe for my mom, dad, brother and boyfriend and they absolutely loved it! I also used taco seasoning on the meat. I will definitely be making this meal again and again.

The taco sauce is an actually called taco sauce. The brand that I get is Ortega Taco Sauce. It is not a salsa. It comes in mild, medium(hard to find), and hot. This is found in the same spot as mexican things in the grocery store. As far as the recipe IT IS GREAT!!! I love the baking them instead of frying them. They always well most of the time fell apart frying them, this way they don't.

I made these and served them with fresh melon on the side. Family and friends loved them - they were so delicious! They were an instant hit that will be added to my favorites list.

Even baking it this is still over 800 calories per serving. Delicious but would love to see a slimmed down version.

Pretty easy really:
Use fat-free refied beans. Sams sells cans of them in bulk.
2% fat or fat free cheeses.
I use 93/7 lean ground beef in my recipies.
Check around on the flour tortilla. Not all of them have the same fat and calories.
Ditto the butter. There are many light alternatives. You might also consider misting the tortillas with light oil or oil alternative.
One thing to consider though is that leaner cooking can not only change the flavor of the meal, but also impact cooking times, consistency, and other factors. And if you cut out all the excess fat, the final result may not actually be all that enjoyable to eat.

I live in Phoenix, where we eat a lot of Sonoran Mexican food. I tried this recipe even though I knew it wasn't for real chimis and it was GOOD! I used Chulula Hot Sauce (Tapatio is good too - those are the 2 staples in all our homes here) and then some salsa on top when they came out of the oven. My tortillas were fresh from the tortilla factory place down the road, and that makes a big difference. Carolina's tortillas cannot be beat! (especially on Sunday mornings, after waiting in line, hot from the oven, slathered with butter)
However I must say that the name of the recipe is misleading: it's a recipe for baked burritos, not chimichangas. Chimis go in the fryer, not the oven, and they are always topped with guacamole.

This recipe was so easy and delicious, really great for the picky eaters! My hunny really liked it, I even tried it with chicken the second time around. It came out just as good, if not better. I plan on incorparating this receipe into my "Fiesta Night" cookout sometime real soon. Loved it, loved it, loved it! ♥

But I dislike grease and don't eat red meat. I often cut up several boneless chicken breasts and saute them with part of a packet of taco seasoning. (I use about half the amount per lb because you don't need that much sodium.) One pan of chicken is good for at least three nights of meals, such as tacos, enchiladas and chimichangas.
I usually use the smaller flour tortillas, canned refrieds covered with a layer of mild green taco sauce, leftover chicken meat, chopped onions/black olives, and shredded cheddar. Instead of butter, I put a little vegetable oil on a pizza pan, roll the filled tortillas in it to coat evenly, place seam side down, and turn halfway thru cooking. I like sour cream and salsa on the side.
This beef/bean recipe sounds awesome, but my point is you don't have to do it so elaborately to discover the goodness of oven-baked chimichangas. It's a great way to use leftover meat and whatever you happen to have on hand, whether it's pintos or black beans, monterrey jack or cheddar. Add or subtract anything, customize for individual eaters.

Try this with corn tortillas, black beans, low fat cheese and grilled chicken. Tastes good and has WAY less calories. Ground turkey would be good too!

If you're concerned with the calories then use low fat cheese and tortillas that are made without lard and no sugar. Also, the butter or margarine towards the end is really optional. You can turn off the oven within the last 15 minutes of cooking and just let them finish cooking with the heat of the oven.

Instead of ground beef, use ground turkey (if you brown it for a little bit longer with a bit of onion on the bottom, it will taste awesome!)
Use 2% cheese (I cant even tell the difference anymore)
Use fat free refried beans. You may want to mix in your favorite 'flavor herbs' into them before using them. I usually throw in whatever the recipe already calls for to add some flavor!
Instead of flour tortillas, I always get whole wheat. I would recommend basting them in a bit of the taco sauce( and I mean a bit! No more then a couple tablespoons!) that's been diluted with a bit of water. It lets the somewhat harder less flavorful tortillas really taste great!
Also, look at the taco sauce you are buying! If you have options, go for the one with the least calories and sodium. If you only have on choice, consider using 1 or 1 1/2 cups of the sauce and some taco seasoning. The seasoning will keep the flavor while cutting out a lot of sauce calories.
Also, instead of butter, try using a high temperature healthy (canola, grapeseed, etc) oil. It wont burn like some oils (olive oil can start to burn at high temperatures and once you cook oilve oil, you start losing all the great benefits from it) do and will cut out tons of calories!
Also, when cooking the turkey, add a little spice/herb to it to really give it a great flavor!
A great recipe and I love that its baked. I stay far away from frying anything and I love that this just goes into the oven.
I will definitely be adding this to Mexican food night to go along with my catfish tacos and grilled chicken quesadillas!

I already have a recipe very similar to this, but it's for a casserole. This turned out great though. So much better than the fried kind I love to make.

Really good...and even better the next day. I added diced green chiles to the refried beans and it was awesome. I also sprinkled shredded cheese on top and let it melt before I took them out of the oven. Someone else mentioned not to bake them the entire 30 minutes, so I did just 15 minutes and broiled for about 5 minutes to brown the tops. They do make a mess in the kitchen, but it's worth it. I'll make it again for sure! Oh, and don't forget the sour cream on the side!

Chimichangas aren't mexican. They're actually more of a tex-mex type thing. They are tasty though.

wanted to try something new and chose this..was easy to make and very tasty..i also used taco seasoning, but next time im going to use less chili powder.was just a bit too much per recipe.topped off with some sour cream too.affordable, easy meal!

Come on! Why not create authentic dishes using authentic spices and ingredients? Taking the best of what is really used on a real Mexican dish and using only the healthiest of ingredients and spices.Of course you are trying to keep it healthy. Which if it can't be accomplished using the authentic dish, then don't call it Mexican Food, Call it what it is a better healthier version of taco bell.

to cut down the calories, you could suubstitute beef for ground turkey, use whole wheat tortillas, and low fat cheese. You could also brush the tortillas with olive oil instead of butter

I used ground turkey instead of beef and it was a hit. No one new it was ground turkey. Also good with chicken. I steamed the tortillas to make them roll tighter. This is the best recipe.

This was a very good recipe, but you can cut half the fat, by using fat free cheese, fat beans, and fat free tortillas, as well as fat free sour cream. I also added some black beans for an extra kick. I will definitely make it, next time with chicken.

I saved so much money using less ingredients than they suggested. I bought medium La Costeña Green Mexican Salsa and put that into the cooked meat instead of taco sauce. It already has green pepper chunks inside so you save time and money on that. I also put one small can of tomato sauce in the meat to give it the tomatoey taste. This made it so much easier than that huge list of things.

This recipe is fabulous!!! It's great for an easy dinner and I always go back to it when I can't think of anything else to make. I have also made this recipe with ground pork and ground chicken for a healthier option.
