1. Ingredients

  1. 1 1/2 pounds lean ground beef
  2. 1 (14 ounce) can beef broth
  3. 1 (14.5 ounce) can Italian-style diced tomatoes
  4. 2 cups uncooked farfalle (bow tie) pasta
  5. 2 cups sliced zucchini, (1/4 inch thick)
  6. 3/4 cup grated Parmesan cheese, divided

2. Cooking Directions

  1. In a large skillet over medium/high heat, brown the ground beef until no longer pink, breaking up into 3/4 inch pieces. Remove beef with a slotted spoon to a bowl. Pour off the drippings.
  2. Return the skillet to the heat and add the beef broth, tomatoes, and pasta. Stir to coat all of the pasta. Bring to a boil and reduce heat to medium.
  3. Cook, uncovered, for 15 minutes stirring frequently. Add zucchini and continue cooking for an additional 5 minutes or until pasta is tender.
  4. Return beef to the skillet and stir in 1/2 cup of the cheese; heat through. Sprinkle the remaining cheese over each serving.

Yield: 6 servings

3. Still Hungry?

Ground beef, diced tomatoes, farfalle pasta, and sliced Zucchini, all simmered together and topped with Parmesan cheese.

  • Not enough seasonings for our taste....

    The basic recipe is a simple and tasty combo, but my family likes alot of herbs in our food, especially Italian. I dressed this dish up with fresh thyme, oregano, parsley, basil, roasted garlic and crushed black pepper and I also added some finely shredded romano and mozzarella cheese. I think I would have liked it even better if I had some tomato paste or just a touch of sauce to add more depth of flavor.

    It is a good dish, so if you aren't keen on spices or like me, don't mind adding a little to your taste it's definitely worth trying and is a perfect easy dish for teen cooks.

    I thought this dish was very good. I took the advice of the reviewer above and added the extra seasonings which I think helped the dish out alot. I also seasoned the beef with garlic salt and seasoned salt while I was browning it. My husband is very picky and he even liked it.

    I've got 2 boys who aren't too picky. But I was worried there may be too many tomatoes...no worries... they cooked down nicely right into the pasta and broth. So, this is 3 reviews in one!!! We all loved it. It's like the helper box stuff, kicked up several notches. Both boys cleaned their plates!!!

    Love the simplicity - hardly more trouble than "Food Helper" but greatly improved by using fresh ingredients. I also use more spices but plain tomatoes (we like basil, thyme and garlic). I think a better parmesan cheese adds greatly to the dish. We have made this repeatedly and it is always a sure bet with our baby granddaughter, as well as easy to bring as leftovers for a tasty lunch at work.

    I didnt even bother making the original recipe given, it sounded too boring. I added alot of spices and different vegetables, like mushrooms. i dont eat meat so i didnt try it but everyone else love it.
