1. Ingredients

  1. 1 cup shortening
  2. 2 cups white sugar
  3. 2 eggs
  4. 2 tablespoons mayonnaise
  5. 6 very ripe bananas, mashed
  6. 3 cups all-purpose flour
  7. 1/2 teaspoon salt
  8. 1 teaspoon baking powder
  9. 2 teaspoons baking soda
  10. 1 cup semi-sweet chocolate chips
  11. 1/2 cup chopped walnuts

2. Cooking Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease two 9x5 inch loaf pans.
  2. In a large bowl, cream together the shortening and sugar until light and fluffy. Stir in the eggs one at a time, beating well with each addition. Stir in the mayonnaise and bananas. Stir together the flour, salt, baking powder and baking soda. Blend the flour mixture into the banana mixture; stir just enough to evenly combine. Fold in the chocolate chips and walnuts.
  3. Bake at 350 degrees F (175 degrees C) until a toothpick inserted into the center of the loaf comes out clean, about 50 to 75 minutes. Cool loaf in the pan for 20 minutes before removing to a wire rack to cool completely.

Yield: 20 servings

    I have been making banana bread for years and this is a good recipie. As for the comments before,there is a lot of sugar because it has 20 servings, thats a lot of servings. I suggest that instead of shortening I would use unsalted butter in equivelent, that is, in the same amount. Butter adds a better flavor then flavorless shortening.

    You can replace some or all of the shortening with apple sauce and add a little less sugar. It will still be moist and delicious but will have a lot less fat and less sugar. Enjoy!

    Between the two cups of sugar and the chocolate, it was just way too sweet for my tastes. I tend to steer clear of shortening as well, but gave this a try...too sweet
