I made this recipe last night. I quadrupled it to make a big enough batch. I used canned peeled tomatoes, but used fresh green beans.
For the bell pepper I used yellow, red, orange, and green to give it a lot of color and extra nutrition. I will definitely make this again often. I've made cacciatore before but this is simple and not over-cooked. The veggies still had flavor and texture. The only reason for giving it 4 stars is that it is very basic--nothing extraordinary--but a perfect weeknight recipe.

Try adding a can of cannellini beans to this recipe. It turns out to be a great addition. Also, try a can of San Marzano style tomatoes and hand crush them instead of the plain tomatoes. Adds that Basil flovor. Abondonza...

I made it this evening and my 3 picky eaters loved it!. I did add salt to the recipe.. and a smidge of sugar to cut down on the acidity of the tomatoes. I

I think that this is a really good recipe but it is even better if you fix it the proper way with sauce instead of whole tomatoes. I would include the greens but leave out the tomatoes and make a sauce instead. Sorry was married to an Italian and he wouldn't have liked this dish.

A true cacciatore consists of onions, pepper, and mushrooms in a tomato sauce. This is a mislabel recipe/ It may be a decent casserole, but it has no right to take on a traditional name without first having the proper ingredients. A previous review also stated this only to have a different user point to another review wherein the user stated that this was a superior cacciatore because the veggies were not over cooked. That is a problem of technique and not recipe, and certainly not a point of authority.

I made this tonight, and I was thoroughly impressed. It was delicious. I omitted the bell peppers, though, because I...suck. It was very tasty. I actually used canned tomatoes (which had green peppers and celery in them), drained them, and did everything according to the recipe. It was incredible. I know this may be seen as sac religious to some, but I served it over rice, and they complimented each other perfectly. I will definitely be making this for the family this Winter. :)

I made this for my fiance and myself tonight, and both of us loved it. We're on a fitness program that has a very strict diet, and I'm always looking for recipes that are healthy *and* taste good. I used no-salt tomato sauce, substituted sliced mushrooms and zucchini for the green beans, and threw in a dash of Splenda to cut down on the tomatoes' acidity. I served it over whole wheat couscous with some fresh basil and Parmesan on top. This is soooo delicious, and very hearty.

Obviously those that tried this recipe have never had real chicken cacciatore. Yuck, yuck...YUCK ! No I haven't tried this recipe because I know how to make real chicken cacciatore. Why did I check the recipe out? Because I wanted to see what made it 'easy'. Real chicken cacciatore is not hard to make and tastes alot better than this crap ever could!! Don't use this joke of a recipe!!
