Try adding a can of cannellini beans to this recipe. It turns out to be a great addition. Also, try a can of San Marzano style tomatoes and hand crush them instead of the plain tomatoes. Adds that Basil flovor. Abondonza...
I made this recipe last night. I quadrupled it to make a big enough batch. I used canned peeled tomatoes, but used fresh green beans. For the bell pepper I used yellow, red, orange, and green to give it a lot of color and extra nutrition. I will definitely make this again often. I've made cacciatore before but this is simple and not over-cooked. The veggies still had flavor and texture. The only reason for giving it 4 stars is that it is very basic--nothing extraordinary--but a perfect weeknight recipe. Thank you very much!
I made it this evening and my 3 picky eaters loved it!. I did add salt to the recipe.. and a smidge of sugar to cut down on the acidity of the tomatoes. I
I think that this is a really good recipe but it is even better if you fix it the proper way with sauce instead of whole tomatoes. I would include the greens but leave out the tomatoes and make a sauce instead. Sorry was married to an Italian and he wouldn't have liked this dish.
