  1. 6 tablespoons unsalted butter, softened
  2. 1/4 cup olive oil
  3. 1 tablespoon minced garlic
  4. 1 tablespoon minced shallots
  5. 2 tablespoons minced fresh chives
  6. salt and freshly ground black pepper to taste
  7. 1/2 teaspoon paprika
  8. 2 pounds large shrimp - peeled and deveined

2. Cooking Directions

  1. Preheat grill for high heat.
  2. In a large bowl, mix together softened butter, olive oil, garlic, shallots, chives, salt, pepper, and paprika; add the shrimp, and toss to coat.
  3. Lightly oil grill grate. Cook the shrimp as close to the flame as possible for 2 to 3 minutes per side, or until opaque.

Yield: 6 servings

    I have put the shrimp on kabob sticks w/ veggies and I also have put the shrimp in a pan w/ some of the extra butter sauce and baked them in a 350 degree oven for about 10 minutes... :)

  • If you want a scampi DINNER instead of appatizer

    I really like this dish and recipe but instead of putting just shrimp then here's some other stuff you can put. I made this with my grandma accept we put shrimp, portabella mushrooms, and scallops with it. But it is pretty rich so it helps to tone it down if you put lemon juice. Trust me its DELICIOUS

    the word scampi in italien means shrimp!
    so what are you cooking ? shrimp - shrimp
    the original recipe is called Scampi Triestina from Triest, Italy
