  1. 1 onion, chopped
  2. 2 stalks celery, chopped
  3. 3 cloves garlic, minced
  4. 1/4 cup olive oil
  5. 1/4 pound thinly sliced prosciutto
  6. 3/4 cup vodka
  7. 1 (28 ounce) can crushed tomatoes
  8. 1/4 teaspoon dried oregano
  9. 2 tablespoons chopped fresh parsley
  10. 1 tablespoon dried basil
  11. 1/4 teaspoon cayenne pepper
  12. 1 cup half-and-half cream
  13. 1 pound penne pasta

2. Cooking Directions

  1. In a large skillet, heat oil over medium heat. Cook onion, celery, and garlic in oil; stir until soft. Add prosciutto and vodka. Simmer until almost all liquid is gone.
  2. Add tomatoes, cayenne, and herbs. Simmer for 10 minutes.
  3. Stir in half and half, and heat for 3 minutes.
  4. Meanwhile, cook pasta in boiling salted water until done. Drain. Serve sauce over noodles.

Yield: 5 servings

3. Still Hungry?

A generous measure of vodka and prosciutto is cooked down to its savory essence to flavor a saute of onion, celery and garlic. Simmer with tomatoes, spicy cayenne, oregano, parsley and basil, then stir in half and half. A marvelous sauce over noodles!

    This was very easy to make, easy cleanup ... and fun too.
    The only substitute I used was johnsonville brats sliced diagonal instead of the prosciutto.
    Easier on the budget ... and tastes AWESOME when boiled down with the vodka.
    When my grandad heard that I was using so much vodka in the recipe, he got a bit worried, but ended up loving it.
    Makes way more than five servings.
    I divied up the pasta with about two cups for each of us (grandad, granmum and I) and still had alot for leftovers. Grandad said that I gave him too much ... but couldn't stop eating it because it was so good!
