Why You Should Get Over Your Fear of Carbs

Posted Mon, Jul 20, 2009, 1:09 pm PDT
POST A COMMENT »

I'll just share the good news now: it's possible to regularly eat the fun kind of carbohydrates (a.k.a. pasta and pizza) without weight-gain. Hard to believe since the fear of bread products has become so embedded in our culture. Once eccentric carb-ditching tricks have become normal: asking the waiter to hold the bread basket, scooping out the insides of bagels, and forever ordering the fish over spaghetti. Nutritionist and author of Skinny Chicks Don't Eat Salads, Christine Avanti flips this Atkins paradigm. Here she explains the best way to eat carbs and why they are the essence of energy, metabolism, and fat-burning.

Christine Avanti's Rules on the Right Way to Eat Carbs

1.  Combine carbs with a protein. Combining a protein with a carb not only fills you up, but it lowers the overall glycemic index (the GI, a popular way to measure the speed that carbs enter the bloodstream in the form of glucose or blood sugar). According to David Ludwig, M.D. of Harvard Medical School, high GI meals are like newspaper in your fireplace, quick to flare up and burn out, while low GI meals are more like slow-burning logs. This one trick, if used consistently, can influence your weight loss plan more than any other eating tip.
Example: Pasta with a meaty tomato sauce

2.  Eat carbs more often!  While the conventional approach to dieting teaches you how to omit meals, the smarter approach is to make sure you do not miss meals. And it gets better. Eating a carb-protein meal 4 times per day rather than 3 helps keep blood sugar levels stabilized. This keeps the metabolism firing and energy levels high. Research has demonstrated that regulating blood sugar levels regulates hormonal secretions which results in optimal fat burning. Not only this, but carbs must be present in the system for the chemical process of fat-burning to work.
Note: For portion sizes and many more details, check out Christine's book.

3.  Eat carbs at every meal.  Believe it or not, this is a healthier approach because you will stabilize blood sugar and prevent the urge to binge later. Skipping carbs at a meal almost always leads you to make up for it later; usually in the form of late-night cookies. This is because the brain needs the glucose from carbs for fuel and if it doesn't get more within 4 or 5 hours, your body has no choice but to break down lean body tissues (like muscles) for fuel.
Example of what not to eat: salad with grilled chicken -- too low on carbs! Much better to eat a grilled chicken burger with a side of fruit.

4.  Eat carbs late at night. Yes this is just as important as the rest of your meals. And go ahead and eat dinner even if it is late. Starving yourself or skipping meals slows the metabolism and let's face it -- it isn't fun to starve! To keep the metabolism humming and the fat burning, eat a full meal including carbs even in the late evening. Just be sure to eat a healthy protein-carb combo and if it is really late, you might want to cut the meal in half.

5.  Don't overdo it at one time. Your body isn't a cash register. It doesn't add up your total at the end of the day. It only cares how much you eat at a single meal. If you eat one entire large deep-dish pizza, your body converts the carb overload to fat storage. However if you only eat two light slices now and two slices for dinner 4 hours later, you won't overload the bloodstream with glucose at one time, thus you will keep your fat-burning going. So, keep each meal a reasonable size and spread your carbs evenly over all the meals in the day.

Craving the sweet-style of carbs?  Try these tricks for guilt-free cupcakes.

Wrong, wrong wrong, I only eat a few carbs a day and I don't eat cookies late at night. You must have willpower.

As with everything related to our existence, there are three clues: 1) Moderation, 2) Won't power, and 3) Exercise. Explanation? Keep "meals" balanced, learn to say "No," to large helpings, and remember that the most effective exercise is the "push back." Yes, eat a moderate, balanced meal and then push back before seconds!

THIS IS SO WRONG(.I wish it were true I would be in great shape). Digestive enzynes in the body work differently with carbs versus protein. Also eating at night can promote inflammation. The only half truth here is to eat less. check out the work of Dr. Fred Bisci.

I lost 50 pounds in 6 months eating exactly like this. Yes, I was also exercising, but I don't do salads and I don't eat fruit, so not only is the article correct, but I'm proof that it works! Hooray for pizza and pasta!!

Disagree with the post. Moderate carbs, whole grain, noon hour. The body is attempting to restore itself during sleep, digesting and processing during sleeping is not healthy.

I love carbs but the truth is you can easily go overboard even if you're exercising. I definitely used the Atkins diet to burn off roughly 15 lbs along with swimming and weights. Now I keep my intake low, around 100g. I sometimes treat myself to a couple extra pieces of pizza or some cookies. If I followed this article I would defeating the purpose of my regimen. It includes every possible no-no in the book. What happened to snacking to keep the metabolism going until you have a balanced meal?

This is exactly how diabetics are told to eat. The author is a nutritionist are any of you? As an RN, we teach this ALL THE TIME! However not all diabetics listen and yes they are already overweight but if they follow the guidelines they will lose weight. Moderation I believe is one of her points. If you eat this way and are still over weight check your portion sizes and do you have protein ? There are always NEGATIVE NILLIES who border on abusive comments

Where are the studies that proove this article right? I don't see any!! I lost fat (not necessarily weight) by cutting on carbs and increasing my protein intake, I have more lean muscle and I can't get rid of the love handles because I don't want to quit my weekend burger. If this was true, the burger should help, I eat no fries, only the bun and still have love handles, workout and lift weight Mon through Friday. This lady makes assumptions not studies. It is wrong to misslead people on things you think are true but no proof.

"This is because the brain needs the glucose from carbs for fuel and if it doesn't get more within 4 or 5 hours, your body has no choice but to break down lean body tissues (like muscles) for fuel" How do I shred this? let me count the ways! First off, when a human stops stuffing themselves with carbs the body will take about 2-3 days to get into KETOSIS, this is the process where the body is now burning your OWN BODY FAT AND CONVERTS INTO FUEL, this process keeps your body from thinking it's in a fast, if you cut out 75% of your calories and that was all you had done then yes! You would burn lean muscle mass as apposed to fat which is why your body thinks you're starving and doesn't use the stored fat as fuel. I eat around 1700 calories a day which in those calories I eat about 20 grams of carbs, I love eating this way, I'm never have hunger and I always feel more satisfied in the evening if I eat some lean turkey with maybe a slice of cheese as a snack, my metabolism is always cranking...EXERCISE! Get out there and just walk, start of with a mile and then work your way up to a few miles, that's all you'll need to lean it up and look great, also drink plenty of ICE WATER, it takes longer for your body to heat up that same ounce of ICED WATER and you're burning more calories a day for doing that, about 120 extra a day just drinking ice water....

in nature people do not eat a lot of highly refined carbs. the south beach diet is the one i follow. it is high protein, low carb, with lots of vegetables and fruits and fiber. it's very easy to follow and is a very healthy diet. it lowers serum glucose and hemoglobin A1c, great for diabetes prevention and treatment.

The main problem I have with the article is that it is too simplistic. Just saying "eat carbs", as if all carbs were equal can lead to quick weight gain. Some carbs, especially pasta, can be calorically dense, and the portion sizes need to be reduced to make up for that. There is no mention here that the total number of calories needs to remain low enough to prevent storage as fat. There is no mention on balancing the macronutrients within that calorie total. Although you can make a case for the statements in this article, it would be very easy for someone to read this article incorrectly because of all the basic facts that are missing and to see disasterous dietary results.

It all depends on your metabolism. I'm an anaerobic workout fanantic (addict) so I can eat high carb foods, in fact I need the high-carb fuel, because I burn it up in my sleep. My BMI is 18 and I eat a lot of high carbs with high protein.

To me... Pizza is the PERFECT food. I load mine up with tons of roasted vegies, lean meats and cheese. Made from scratch, I probably eat them 3-4 times a week. If you make them yourself, you know exactly what's in them. Olive oil and super thin crust... nothing better!!

It's so sad that people fall for all the diet gurus garbage!! First, if people would remember that a calorie is a calorie, second-ALL foods break down into sugars (remember that crusty brown surface on your grilled meats--SUGARS!) and finally, there are no bad foods, only bad prep and portions! Will power is the name of the game. If there were magic foods, none of us would fight our weight! Check with a REAL licensed nutritionist for accurate information and ignore all of the so called "doctors" who write diet books--great money makers......

The truth is, we should all focus on becoming vegetarian and use soy protein mainly for protein. The planet cannot sustain the livestock. Starvation would be a thing of the past if we all grew and shared our grains, and didn't spoil the land for pasture, and animal feed, which is wasteful. We'd be healthier physically, mentally and spiritually. I was a raving mad junk food and fatty meat eating maniac so long, and blamed my problems on everything else. Now I know. The karma of animal killing will take over our planet if we let it. Check out "Loving Hut" veggie food chain. Veggie food can be most delicious and satisfyng. Give it a try for a month and see the difference and forget the naysayers until you do.

Guys, the simple truth to all of this is you have to find what works for YOU. Noone is exactly the same. My sister loves the low carb diet and has done well on it. I, myself, don't do so well on a low carb routine. I'm not advocating high carbs but moderate carbs is ok. I tend to do better with 4-6 smaller meals throughout the day (with the last meal being before 8pm) with moderate carbs & protein myself. But again, everyone is different and you have to find what works best for you. Everything in moderation.

I tried low carb for 2 months was below 20 carbs a day lost only 6 lbs . I tried 500 calories a day for 2 months lost another 6 lbs . I went to DR. Had test doen and found out my thyroid was Whacked . So if no diet is working Go see your Dr . I was put on medication . I now eat normal foods such as pizza and bread but in moderation I do not eat a whole pizza or a loaf of bread and have been able to lose weight . All i am saying is if no diet seems to be working for you maybe it is not the diet .

Growing up in an Italian family, we had pasta EVERY night. Next came the meat or fish with grilled vegetables. Dessert was always fruit. We never snacked in between meals. We walked everywhere. Perhaps that is the secret. Walk the weight off and see what happens. Ciao

yes, carbs are a vital source of our energy and we DO need them. NO (BIG FAT NO) do those carbs NEED to come from pizza and pasta. Read labels, there are carbohydrates in almost every food we eat. Even fruit. To suggest that ppl should eat more pizza, pasta and bread is an obvious 'reach' for a column twist. As a health professional I must ask that you think twice next time you decide to write something like this.

This is a bunch of total nonsense. Your premise is that we have a carb paranoia embedded in our culture - from where? You been reading too many garbage diet books. The pizza, bread and beer business is alive and well. The issue is NEVER carbs - NEVER has been. It always the right nutritional balance first coupled with a good exercise program second. Setting up an article regarding a non-existent assumption and then proving its wrong is really weak.
