Italian Stuffed Peaches

Baked peaches stuffed with crumbled Amaretti cookies and Marsala wine is a popular Italian dessert that's an extra special treat when fresh peaches are in season. Topped with a little vanilla ice cream or whipped cream, it's a spectacular way to end a meal.  

Note: Amaretti cookies are available at most gourmet food stores.

Stuffed Peach Recipe

erves 6

2/3 cup crushed Amaretti cookies
1/3 cup coarsely ground almonds
1 egg, beaten
2 tablespoons sugar
6 large ripe peaches, cut in half and pits removed
1/2 cup Marsala wine 
3 tablespoons butter

1.  Preheat oven to 350 degrees.

2.  In a small bowl, combine the crushed Amaretti cookies, ground almonds, beaten egg and sugar.

3.  Butter a large baking dish and put the peaches inside, rounded sides down.

4.  Place approximately 1 heaping tablespoon of the mixture in the cavity of each peach half.

5.  Dot each peach with a little butter.  Then drizzle each with the Marsala wine and bake approximately 35 minutes, or until the topping turns a nice golden brown.

6.  Serve warm, or at room temperature with a little vanilla ice cream or whipped cream.
