Chinese Almond Jell-o

Chinese-style Jell-o, also known as Almond Float is a light, delicious way to finish a meal. It's made simply with gelatin, almond extract and sweetened condensed milk. The Jell-o is cut into cubes and served with a fruit cup or Mandarin oranges on top. This recipe from Ming Tsai appears in The Magical Melting Pot Cookbook. Have fun!

Recipe
Makes 6 servings 

2 packages (1/4 ounce each) Knox unflavored gelatin 
2 cups boiling water
1 cup cold water
1 cup sweetened condensed milk
1 tablespoon almond extract
Fruit cocktail or mandarin oranges in syrup 

1.  Completely dissolve the gelatin in 2 cups of boiling water.

2.  Add 1 cup of cold water and one cup of sweetened condensed milk. Then add 1 tablespoon almond extract. Stir well. Pour into a square or oblong baking pan. Refrigerate until  solid (several hours).

3.  Remove from refrigerator and cut into small cubes. Put in a bowl and mix with fruit cocktail or Mandarin oranges in syrup.

4.  Serve in individual bowls.

    I have had this as child growing up in Asia and it is definitely yummy. We usually mix the almond jell-o with canned lychees instead of fruit cocktail or mandarin oranges.

    This is one of my all time favorites! I look for it every time we go out for Dim Sum. Try it!!!

    I use to have this as part of a mixture of other things like grass Jelly(canned), jack fruit and avocado and leechees, and by lack of other things I also added fruit cocktail and coconut. Then I put shredded ice on top of it then some Kerns fruit punch concentrate ( in a bottle), Or some Hawaien punch concentrate, also in a bottle, then I put some sweet condensed milk over it. I served in a bowl with a spoon and a straw. I called it " YS SHANGHAI "

    Is there someone who has a recepi for " BUMBU BALY FROM FISH?" That is an Indonesian food that is the seved with steamed rice and some vegetables (lalap) with a salsa type paste, that is called Sambal trasi

    the jello is usually in the shape of fish when my grandmother makes it!!! (using a fish-like shaping dish with layered colors)!!! Totally a delight ;)

    For Summer time, add sweetened water, mint and ice to the almond jello cubes and it is very refreshing. Better yet, cut the almond jello into very tiny pieces and drink it with a large straw. (like boba tea)

    Try adding a teaspoon of brandy to the jello and a favorite during summer time is grapes soaked in Ouzo (greek liquor) and then sprinkle powdered sugar on top.
