I love Mac 'N Cheese and eat it several times a week (and I am NOT over weight as a result). It is high carbo, but also high protein. It is super if you add broccoli and/or fresh tomatoes, so you also are getting your vege servings. I want to try adding swiss cheese now, you got me going! THANK YOU!

just plain WRONG...eggs DO NOT belong in mac and cheese.
The RIGHT way is
boil your preferred macaroni, until just barely al dente for every cup of raw pasta prepare:
make a white sauce, two TBSPs of flour for and 2TBSPs real butter every cup of whole milk, blend thoroughly, I like to make mine in a one quart Pyrex measuring pitcher and use the microwave. Keep an eye on it constantly as it will boil over, stir with a whisk every 30 second or so, you can do this in a saucepan too, over moderate heat, stirring with a whisk constantly.
When your white sauce has come to a boil and thickened, add salt and pepper to taste and a teaspoon of prepared mustard (your favorite) for each cup of milk you used. A nice addition is about a TBSP of dehydrated onions. Now get out all of your odds and ends of cheese, the more the better. Make sure there is some Parmesan in there. Return the white sauce to the heat, add the cheese warming til it melts. Now combine the macaroni and sauce in an ovenproof casserole and top with fresh breadcrumbs and pour melted butter over the bread crumbs. Bake in a preheated 375 degree for 35-40 minutes til there is a nice crust.
NOW you're eating! 20 years in restaurants taught me a few tricks.
learn how to make a good white sauce, it's a good base for many things.
Eggs? In mac'n cheese?????
