The Norma Jean recipe sounds soooo delicious. My stomach is growling as we speak. I know this may be an impossible request but does anyone have lactose free recipes for mac n cheese? It would be nice but I'm havin my mac n cheese regardless. It's just not the holidays without it!!

Its amazing that people will play the "race card" when talking about food. Please get over yourself and your issues...these look amazing...I think I will make the MEXICAN for dinner tonight!

These are not stereo typical recipes...she was just giving a name to the variations...If you put Swiss cheese in your mac and cheese what would you call it? If you used "mexican" blend cheeses and chili peppers, would you call it Irish Mac and Cheese? It's one thing to be politically correct, but you don't have to pick apart everything somebody does and assume it's stereotypical or racist...Get a life, it's mac and cheese for Christ's sake...and no I am not an athiest because I said that!

There IS a big difference between homemade mac&cheese and boxed Kraft mac&cheese. Why is it that all the passive aggressive personalities always come on here and post the most ignorant comments? It's so entertaining and at the same time sad.

Kraft Mac and Cheese??? For kids. Home made is the best. I add bread crumbs mixed with a little melted butter and sprinkle on top the last 10 minutes! Yummy!!

Well, I live in Italy and use to live in Mexico and guess what? Putting salame and tomatoes it it DOES make it Italian and putting chilis in it DOES make it Mexican, they are stereotypes, its just good food, duh!!!! BTW, everyone else in the world thinks Americans ONLY eat hamburgers and french fries, so don't get so annoyed. Anyway, to make the Mac n Cheese TOTALLY vegan, a soy beverage for the milk and "fake" cheese, tried it, love it. Thanks.

I have yet to try them, but I have been cooking for about 60 years and these look great. I will be trying them using my own flavors, but sticking with the basics.
Thanks a bunch for the basic and tweaking my adventerous spirit
