I made very few additions or changes. For the Danish and Dwiss, I stirred in about 1/4 cup frozen Pes before baking. For Norma Jean Darden's I chopped about 1 cup broccoli florets and stirred that in , also before baking. For ALL of them I also added nearly 1 cup of finely chopped garden (green) onion sprinkled on top before adding another sprinkling of grated cheese and then baking.

Ahhhhhhhhhhhh Mac and cheese...what else do we need? It is what I call 'vegetarian steak.' Thanks for the great recipes! My music goes well with this--100% 'meatless music,' songs designed to humor as they inspire vegetarians and those open to the idea. Where??? www.vegantunes.com

this is so stereotypical. Chilis in mexican mac n cheese? Wow so expected because that's all mexicans eat right? and Swiss people only eat swiss cheese.

I make mine by using LOTS of cheese, sometimes using Velveeta, sometimes using sharp cheddar and a bit of smoked gouda, garlic and onion powder, milk, butter, salt, pepper, a dash of worstershier or paprika. I melt them on the stove and pour it over cooked pasta, sprinkle some bread crumbs over the top and bake for a half hour. Yuuum!!! (You can use Barilla Wheat Pasta if you are on a low-carb diet).
