When I can't buy from a local farmer, I buy E....Best. Not a commercial it is just that I find them as tasty as I remember as a kid. The extra Omega 3 is an added beni.
Heat the eggs under hot water to bring to room temp. This prevents spreading all over the pan. Preheat pan. Add BUTTER. When foam subsides, add eggs. Plunge toaster. When toast is ready so will sunny side eggs. Want over lightly, while buttering toast, flip eggs, remove from heat and plate both toast and eggs.
Want eggs more cooked-boil or scramble cause you don't like eggs.

is it true that the store bought eggs are usually frozen for sometime than thawed and put on the shelves for selling? Isn't that one of the reasons fresh is best? So I have heard thru the coop. Also, is there a small window of time you can use your fresh eggs before they aren't considered good for consumption?

no egg shells are not bleached they are cleaned as far as eating eggs, just eat them if you like them. dont worry about the long lasting effect they will not be in your body long enough to worry about. so down a few. the only thing you have to gain by not eating them is the thanks of a whole chicken nation. which came first the chicken or the egg? who cares if cooked right the both taste good. and since you have a better chance of getting shot in a driveby then a heart attack dont worry about it

I may have missed it but I didn't hear anyone talk about fertile eggs. Not an egg with an actual chicken in it, but if you are getting homegrown local eggs where there is a rooster around there is a good chance you are getting fertile eggs. Which from what I have heard contain lecithin, that makes them (live food)and it also makes them good for you(contrary to the conventional thinking of the medical doctors). The lecithin is basically like teflon in the blood and allows the blood to flow freely in the system and really keeps everything good. That is just me 2 cents from my studies and research on the subject. Oh and by the way some trader joes depending on the state you live in are allowed to sell fertile eggs and they are very inexpensive, taste great(well for store bought). And they will say fertile right on the box.If the store you are visiting does not carry fertile eggs I have found that the people there will usually have no idea what you are talking about because they are not a common thing, so you just have to keep looking . It is worth it if you can find them especially if you eat alot of them because then I think that is where cholesterol comes into the picture.I like homegrown myself but don't have chickens anymore. Those where the days I really prefer homegrown if you can get um.

To Sheperdess:
That is an awesome story about your chickens, I agree that chickens are funny and whenever I meet someone that owns a couple I just laugh. I wish I could have some one day, but I'm not sure of the ordinance on that in my area.

I just watched 30 Days on FX this past week.. The story covered cruelty to animals..those that provide us with food as well as, those in shelters and in labs. It is so worth the extra few cents, to purchase eggs that come from free range, organic chickens. The animals are happier and healthier and in turn, so is the food we ingest. If a chicken is fed hormones, antibiotics, vitamins or, extra flaxseed; this is unsettling to their systems and then to us. We are in turn introducing hormones, antibiotics, vitamins or other items into our bodies. THIS IS NOT HEALTHY. There are new diseases affecting humans that are not responding to antibiotics. This is because our bodies are becoming inundated with antibiotics in the foods we eat and therefore, we are unable to fight the illness's that are attacking our bodies today. The pollution in the water and the atmosphere from waste products produced by animals is also a BIG RED FLAG! Where does the water go? our streams and rivers and ultimately, animals ingest more of the antibiotics and in turn, so do humans. Additionally, some of our drinking water is polluted with the antibiotics and such. PLEASE ASK YOUR FARMERS TO PRODUCE SAFE, CLEAN, Food@

Stinky eggs? No -- only when Mom Sylvia cooked em - she BURNED everything! Our home smelled like a rubber factory when she burned dem aigs!!!(LOL!)
Ever had a Mom Sylvia-burned asparagus omelet? Discgusting!! She'd turn it over in the pan, and there were black stripes on the bottom from where the poor asparaguses had lain. And WE KIDS HAD TO EAT THAT!!!
Blech -- no wonder I am now a GOOORMAY

PS-- Bacon grease is great-- Nonna Lucia used lard.
Here's something to make you queasy-- when I was a 5 yr old ...angel, growing up in the Bronx.... I opened the fridge door and saw a BIG glass FULL OF ORANGE JUICE!!!! Yum!! I gulped it down and almost gagged -- they were egg yolks.

For all of you brown hens lay brown eggs, white hens lay white eggs - A hen's "ear lobes" determine what color they lay. White ear lobes lay white eggs, red ear lobes lay brown eggs. The only exception is the Arucana/Americana - they lay pastel eggs (don't ask me why).

I think that you should eat eggs from chickens that have been given a lot of steroids and growth hormones... Because the growth hormones make the chickens big and strong, the eggs big and strong, ergo they make you big and strong. I had this one friend who ate a farm fresh egg and got sick because it didn't make him big and strong. Caged, Hormone Filled eggs!! Oh, and the best way to eat them is raw. Believe that Chicken Butts!
