Way to go Simone L! I often wonder why some of the people who respond to HG are even reading it at all. Read something aimed at all natural foods or such. I, for one, like to eat as many fresh foods as possible, but sometimes life and time (or lack thereof) or just a big old craving for something gets in the way and something quick and easy...even if it is (gasp :) ) processed is necessary. And it's okay. Everything in moderation. Those who want to eat all fresh foods and nothing processed...power to you. It is just not the way most of the world cooks and eats, at least not all the time. And for people....myself included....who have struggled with weight issues, things that help in that struggle are always good.

I am going to try all of these, the slaw is something I thing my picky eater will like, and the muffuns are something my little one would love to help make!

Another great tip for two-ingredient, low-fat muffins/cupcakes is mixing one can of any flavor diet soda with one box of any flavor cake mix. My favorites are diet orange or cherry soda with chocolate cake mix! Yum!!

Great recipe!!! I bake everything with meringued egg white (no sugar, just beat 'til they form stiff peaks, applesauce and honey or juice instead of sugar). Works great in any recipe and saves sugar, calories, cholesterol, oil.. the whole she-bang! Not only can no one tell the difference: they're actually lighter, fluffier and moister than ever. No one will guess they're anything but sinfully delicious!

37 g carbs and 20g sugar - Tell me how anyone can think this muffin is diet friendly?? So, you save about 4g of fat using the pumpkin, but the carbs are like a half day qty for the average person. A full day of carbs if you're on South Beach. This is the worst claim for a healthly, diet-friendly recipe I've ever seen. Shame on you hungry girl.

WARNING -
None of these are good for people in general - let along on a diet. I am a Health and Fitness Professional and I must say - the amount of Sodium in the first two items are startling! And that's only one red flag.
Soda is a unhealthy and especially a dietbreaker FOR SURE. Cooked or not.
Articles like these are a small part of why we have an obese/unhealthy nation. Yes, Everything in Moderation, but Life isn't about food - the shorter and less fulfilling your life will be the more you "live it up" with food.

You can also use diet coke instead of pumkin mix. Or for a real twist try spice cake mix and a can of pumpkin- tastes like pumpkin pie. Try it warm and with cool whip for pure heaven with out the guilt of the calories! Yum!

You can take any boxed cake mix and add a can of diet soda and bake. You don't have to add the eggs, water, or oil! It comes out fantastic. Top with some reduced fat cool whip and you have a great cake. :)

Oh my gosh! I love the slaw recipe. I make the Asian chicken salad all the time, but this is a great shortcut. I'd add Manderine oranges, sliced green onions and some sliced almonds and yummy yummy....eat the whole bowl !!
