6 Ways to Make The Most of Thanksgiving Leftovers

One of the best parts of Thanksgiving is the day after when we head straight to the kitchen and dive into refrigerators full of delicious leftovers that taste even better after marinating overnight. Here, a few creative ways to maximize our favorite meal of the year. Gobble up!

1. Morning Remix  Indulge in a post-Thanksgiving brunch scramble by whipping up a few eggs with turkey, green beans, and stuffing.


2. Mash Medley  Punch up those creamy mashed potatoes by heating them with a splash of scented oil (truffle or garlic for instance) or mix in some finely chopped herbs.


3. Turkey Redux  Buy a ready-made piecrust and use the leftover turkey and veggies to create a scrumptious homemade potpie. If you're in the mood, you can also throw in some extras such as corn and water chestnuts. Blend together with cream of mushroom soup for a tasty treat.


4. Empanadas American-Style  Get some use out of that leftover dough from your Thanksgiving pie. Roll it out; cut it into circles, using the rim of a drinking glass, and fill with leftover turkey, sweet potatoes, veggies, and grated cheese. Bake and devour.


5. Cranberry Freeze  Tangy cranberry sauce adds a nice kick to a bowl of creamy vanilla frozen yogurt.


6. Apple Pie Parfaits  Give those last few slices of plain old apple pie a new life. Chop them up, and layer into champagne glasses along with whipped cream or yogurt. Top with a sprinkling of cinnamon and a few berries.
