The Best Chain for Your Wing Fix

Posted Tue, Jan 27, 2009, 5:14 pm PST
POST A COMMENT »

In preparation for the big game this weekend, the Serious Eats gang ordered a mess of wings from the biggest chains to track down the best. Braving the orange fingernail threat, we found the spiciest, the slimiest, and the least objectionable blue cheese dipping sauce. Or if you feel like making your own at home, check the tasty recipes below.

The Players
KFC
Popeyes
Papa John's
Domino's
Pizza Hut

Best All-Around Wings
KFC. They have everything you look for in a wing: good skin-to-meat proportions, good sauce (or a sauceless option), good bellyache of success after, and good leaning tower of bones to prove you ate too much. Case closed.

Best for Spicy Fans

If your taste buds have an ego for heat, go for the Domino's "fiery." These pack a punch, man. Sure, the real spicy freaks might scoff, but they're the hottest of the dial-up wings genre. To extinguish the flame—if you're not scoffing, but choking—get out the mini tubs of blue cheese and follow with a dairy extinguisher. (Milk contains a protein that washes away tongue-burning molecules, and luckily Domino's blue cheese doesn't suck!)

Best for Moderately-Spicy Fans

Domino's realizes that not everyone can handle "fiery." They also offer mild, medium, and hot. And hey, "hot" is just fine for people who like a little heat, but still need to wear some SPF to protect from the burn.

Best Sauceless Wings

While finding sauce under the fingernails for days seems like a prerequisite, crispy wings are also an option. The only moisture here is from the grease. Popeyes offered not only the best, but the biggest. Unlike the iconic "wing," these aren't detached and cut into little pieces. They just give you the whole darn aerodynamic limb! So unless you're emotionally attached to the mini concept, embrace Popeyes.

Best Non-Buffalo Flavor

KFC's "honey BBQ." The sauce had an appealing sweet-to-tang ratio; appealing enough to clean by licking. Unlike the Domino's "BBQ" option, which had hardly any crunch, the KFC wings had an ideal chicken crust.

Most Ginormous

KFC's buffalo spicy wings. Huge! Some were bordering gerbil size!

Best Blue Cheese Tub

Michele was going to disown me if I called this "bleu" cheese. She's right. This probably isn't the time to be all Pepé Le Pew. It's "bl-oo" cheese, not "bluh." Though the taste might inspire a "bleugh" grunt.

Ed volunteered to dip his spoon into each tub. While Domino's and Pizza Hut were sickeningly sweet, Papa John's offered some zing. It was the least bleugh.

Worst Fake Chicken Taste

At times Ed will refer to a past job he had that was somehow related to airline food consulting. So when he identified the "severe frozen chicken taste" in the Pizza Hut wings, we didn't ask questions. All you need to know: these are bad. Just bad. None of the others had such an unavoidable processed, preservative-rich aftertaste. Do not want.

Most Slimy

Wings are usually fried before they're sauced-up, which provides the bird some crisp. But given the slime factor on Papa John's wings, they were probably broiled first. We learned that broiled is not good. Even dunking and re-dunking these in sauce couldn't mask the excessive gooeyness. There's such a thing as good gooey (cinnamon rolls) but this was a bastion of bad gooey.

Homemade Options

Dragon's Chicken Wings

Classic Buffalo Wings

Best-Ever American Wings

Braised Wings with Coconut Curry Herb Sauce

Braised 'Red Cooked' Wings, Shanghai Style

Sweet and Sour Vietnamese Wings

omg. do NOT eat pizza hut wings, i have convinced myself on couple occassions to try a batch and everytime i end up pulling remenants of feathers, etc out of my mouth because they didn't clean them properly. SO, unless oyu like unexpected things ending up in your mouth from your food, then go for it. but otherwise, steer clear.

hey, didn't you know that KFC and Pizza Hut are owned by the same parent company and the Honey BBQ wings are the same at both places. Duh???? How can you say that at one they are great but at the other they suck???

kasd22, I really doubt you got feathers with your wings. It's not like Pizza Hut goes out and kills the chickens themselves; the chickens are killed and cleaned somewhere else, the wings cut off, frozen in a factory. They are then distributed. Many people inspect these wings before they ever reach your mouth. Debra J, it might depend on how each individual restaurant cooks them.

Native New Yorker is great, if I don't want to drive the distance then Buffalo Wild Wings hits it. But the what was listed, Ed hasn't been introduced to wings. That would be like saying the best pizza comes from Pizza Hut----gag!

Ever heard of Buffalo Wild Wings? That is THE place to go for good wings. They're the only ones I'll even consider eating since I'm not a fan of wings anyway... but theirs are great.

Buffalo Wild Wings is a good option, but the best wings I have ever had are from Wild Wing Cafe! Their flavors are far better than BWW.

Hooters, Buffalo Wild Wings, & The WingStop are ALL better than any of these choices above! C'mon, KFC & Pizza Hut?? Might as well put McD's & BK on this list! Still, nothing compares to BACKYARD GRILLIN'!

Debra - Disney owns ESPN, ABC and many movie and music ventures. The televised stuff is not the same on every channel. Just because KFC and Pizza Hut have the same parent company, doesn't mean that the chicken used comes from the same distributor. There are many places that have fantastic wings... WOW - world of wings, Wing Stop. By far the best wings are where you least expect them... any place that sells homestyle grilled BBQ & little small cantinas (along with some of the best chips and salsa)

While I agree Buffalo Wild Wings and Wingstop have the best wings, this article was about fast food restaurants, where you can dial-up or order online. If you wanted to do sit-down restaurants, that's a whole other article.

Those are the worst choice for wing. BW3's have great wing sauces but when it comes to good meat and sauce Macgregors cajun gold in rochester NY has the best hands down.
