    how about the correct way to cook a prime rib roast? I cook one every Christmas but I could always use a tip or two! thanx kathy

    for prime rib i make a paste of beef base ,black pepper,garlic,and rub it all over the roast before cooking.

    Robert M S , I believe you could browse through ALL the recipies in each of the 8 menus and find one dish from each you could easily adapt to the needs of a diabetic.

    The traditional is not tradition in a black household. We never have mashed potatoes or green bean casserole. And not fruit cake which is so bad

    I'm truly sorry we have to address everything in this country as a 'Holiday' something or other instead of Christmas. I'm sorry if some of you are offended by the term Christmas, but that's what 90% of us celebrate in this country, so deal with it!

    hey this a great menu but what about the VEGAN? ;) i guess i'd go with substituing w/egg replacer, soymilk, soy butter etc. for the ingredients in certain recipes and it'd be all good. oh yeah and a tofurkey turkey. hehe. thanks for all the different recipe ideas.

    for prime rib I use olive oil, salt and pepper, just rub it all over....cook with the fat cap on top at 400 for about25 mins to brown, then lower oven temp to 325. Cook until internal temp is 140 MAX, (approx 20 mins/pound), use a high quality meat thermometer, very worth the investment. Do not go any higher than 140 as temp continues to go up after you take it out of the oven. Take out and tent w/tin foil. Best prime rib anyone in my famly has ever had.

    Hey, where's the ravioli? My great grandparents came from Genoa and we always had meat ravioil with homemade pasta sauce as a first course before Christmas dinner. To me, it simply is NOT Christmas without my ravioli!

    For Diabetics: I came up with this entree, one pan, I love it! Start off w a little peanut butter, garlic, soy sauce, add chicken breast-cubed and mushrooms. med-low heat & cover & stir.When chicken is done, layer with lots of fresh spinach(rinsed-leave water on it) Dot spinach with feta cheese cubes, put lid on it and let steam for a few minutes. Til cheese melts a bit. Absolutely delicious!

    I cook a prime rib one way only. Get the oven as hot as you can. Preheat for 1/2 an hour at max. Rub the prime rib with whatever you want. Olive oil, garlic etc etc etc. Nothing complicated unless you want to do so. It really doesn't matter. Pop it in the oven and cook it for just less than 20 minutes per pound. Shut off the oven after about 1/2 hour. Do not open the door. It will be medium rare or so. If you don't like it medium rare cook it the full 20 minutes per pound. Always use a meat thermometer no your never guessing. Nothing more to it than that. The taste depends on how good a piece of meat you buy. That's the secret. Enjoy!
