Kristi K.-The sugar snaps make a great crust in the pumpkin swirl cheesecake I make. I smash them to practically a powder though and then I think mix with butter. Don't quite remember. I imagine this recipe is along the same line. I'm not very fond of Ginger Snaps so was nicely surprised that I didn't dislike them as a crust. Try it!
