When entertaining friends and family at home this time of year, I love serving fresh, green vegetables with a twist. A great side dish for just about any entrée, my parmesan encrusted asparagus is easy to prepare and always a hit.
Ingredients
20 to 30-small asparagus stalks
2-tablespoons butter
2-tablespoons olive oil
½ to 1-cup freshly-grated parmesan cheese
Method
Preheat oven to 350°
Trim the bottoms off of the asparagus stalks
Boil the asparagus until al dente
Place stalks on a large baking tray
Cover in olive oil, butter and parmesan cheese
Bake at 350 15-25 minutes or until crust forms on the stalks
Serves 4
