One of the most interesting things about being an immigrant in America is taking the traditions of your native country and celebrating them here. Every weekend between mid-August to mid-September, Swedes celebrate with crayfish parties. We have two types of crayfish available in Sweden, those from the ocean (that taste like a blend of jumbo shrimp and lobster) and those from lakes and streams, which are similar to the crayfish known in Louisiana as mudwalkers. Crayfish parties are all about celebrating the last golden days of summer with your friends.
There's not a lot of meat on crayfish, so we Swedes typically supplement our boiled crayfish with boiled potatoes, cheese, grilled corn and tons of aquavit. If you can't find crayfish in your local stores, they are readily available through mail order sources online. Preparing them is as easy as can be,a with my simple Swedish-style recipe. Enjoy the last days of summer!
Boiled Crayfish
2 pounds crayfish
2 cups beer
2 quarts water
1 cup sugar
1/2 cup salt
1 stem dill weed
Combine the beer, water, sugar and dill weed in a large pot and bring to a boil. Add the crayfish and let simmer for 2-3 minutes. When they float to the top, remove from heat and let cool to room temperature. Cover and refrigerate overnight.
Serve chilled with boiled potatoes, cheese, and grilled corn.
