Simple Lemony Grilled Seafood Baguette

Have you been wondering what else is easy to grill besides burgers and dogs? Try an open-faced seafood baguette, one of my favorite meals on a hot summer day. It couldn't be easier to make:

Go to the store and buy the freshest fish you can find and a fresh baguette.

When you get home, preheat the grill and marinate the fish in olive oil, lemon juice, garlic, and thyme for about 10 minutes. Put the fish on the grill for about 3 minutes on each side. Slice the baguette in half lengthwise, hollow out some of the bread and quickly grill the cut side until it's lightly toasted.

To serve, spread mayonnaise on the baguette and sprinkle it with some lettuce. Top the lettuce with the seafood, then add a layer of sliced avocado. Drizzle with lemon juice and a few drops of Tabasco for a wonderful -- and simple  -- sandwich.
