Fire Up the Grill for 3 Easy Weekday Meals

As I travel around the US, you can take your pick of whatever type of food and price point for your meals, from the big chains to tiny taco stands. With our busy lives -- late nights at the office, after work commitments, and kids' extracurricular activities -- cooking on weekdays is quickly becoming a special occasion meal. Maybe it's time to take back weekday suppers with simple meals that can be prepared and assembled in minutes.

Now that we are heading into summer, more fresh fruits and vegetables are available, which make it easy to put together a delicious, quick meal. Pull out the grill and try whipping up some of the following special but simple meals:

  1. Serve a grilled chicken breast with a salad of tomato, mozzarella, and arugula.
  2. Grill a piece of fish, and serve it with boiled potatoes tossed with buttermilk vinaigrette and a grilled lemon.
  3. Take a slice of great bread, and grill it; top the bread with a piece of cheese, tomato slice, and a nice piece of romaine lettuce for a quick and easy sandwich.
