Pizza Made Easy

Pizza is the ultimate convenience food. But as many home cooks have learned, mastering the art of making pizza at home is no easy task -- you need a very hot (600 degrees F or more!) oven to make a truly dense and chewy crust. But fortunately, you can make a variation of pizza at home in just minutes:

1. Start with a base of store-bought Damascus flatbread, pitas, or tortillas.

2. Grill on both sides to give the crust a little crispness.

3. Drizzle with tomato sauce and sprinkle with Parmesan or mozzarella cheese.

4. Bake in a 400 degree F oven for about 12 minutes (on a pizza stone if you have one).

5. Top with fresh basil or Parma ham.

You can also try other variations that play off the bread-sauce-cheese combination of pizza. One of my favorites is to top a piece of grilled flatbread with baba ghanoush and tahini, then sprinkle it with anchovies and black olives or feta and toasted almonds. It's a quick and healthy meal you can make in minutes!

    hmmm...I have already used tortillas (pre-baking for a few minutes) and it makes the best home made pizza ever. I could never get my crust thin enough and the idea just hit me one day to try a tortilla. Great idea!!

    I like to mix some fresh, chopped basil and extra garlic into my favorite pasta sauce to put on my pizza (with some toppings of course!)

    Sounds yum. I am stuck on pizza. Usually, depending on a crust, I would sprinkle corn meal on a pan so as not to stick.

    I am unable to find a recipe for home made tortills. I don't want the store baught ones. does anyone have a clue???
