I have tried brown butter mashed potatoes for coming Xmas, and it is a keeper! Yummy. Ok, calorie wise it's pretty scary, but what the heck! It is Xmas!!! Other than Xmas, I found brown butter mashed potatoes go great with hearty meats (stews or beef, goose). The key is to use mostly melted brown butter and very little cream/milk.

The formula for the right amount of mashed potatoes is one average size potato (8oz or so) per person plus 1 for the pot. So if there will be 10 people for dinner that requires 11 potatoes.

Much better with sour cream, 2% milk, melted butter, fresh garlic cloves, salt, pepper, and parsley. That's how mom makes it. But her trick is instead of using a fork to mash, she uses a beater and the potatoes come out so creamy and smooth. Trust me...try it...but better than this recipe.

This has a whole lot of fat in it. I brought this the other night to a party and it was skipped over in favor of other mashed potatoes. It's just not that great.

I make mashed potato Tacos. First I add powder cummin and a bit of cooked hamburger meat juice, then add salt and black peper to the mashed potatos. Heat some corn torillas so this can be folded. Put a little grease in a frying pan . Take the warm tortillas and spoon on the mashed mixed potatoes and fold them like a Taco, Fry the potato tacos in the grease until crispy, serve whie still warm....delicious.....

Mashed potatoes has many different variations. Most important is the eay you like your potatoes. I myself like to stir the potatoes until they have a creamy consistancy. My grandmother would call these creamed potatoes.
