(regarding the low fat vs. REAL food debate) . . . I know it is supposed to be whole natural foods that should be eaten, but the bottom line is, if you want to shed pounds and still eat food like this, the low fat/fat free versions give you that opportunity. If you eat them all the time or only buy low fat/ fat free stuff and eat A LOT, I think that you are adding a lot of unnecessary additives to your daily diet. (They have to add "other" things to the low fat food to make it taste like the real thing.) I do think all things in moderation though. . . :) And I agree with Steph Ann, all the worrying takes all the fun out of it! Does anyone use Canola Oil mayo? I havent tried yet, but am very curious.

I made the five layer dip exactly and it disapperaed fast. Everyone loved it. I will make it again for New years Eve. Maybe I'll add shredded Mexican mix cheese and sliced olives. Make sure you get a hardy chip for dipping.

These recipes all sound great, but I agree that the lowfat versions of sour cream, cheese, etc...does tastes watery and not much flavor...eat and and be merry during the holidays

I recently substituted low-fat cheddar for regular and could totally tell the difference. There are a thousand recipes that are better than trying to make an old standby into something it's not. One of my favorites: Make your own roasted red peppers and puree them with lowfat cottage cheese. Add a teaspoon of lemon juice, and serve with baked pita chips. Delicious! (Lemons and spices add a lot of flavor).

I find that many of the FF products are pretty awful. Especially the sour cream and cream cheese. I's like someone mixed flour into a watered down version of the real thing. (like skim milk vs. whole. I hate skim milk.) Its grainy and kind of gluey. I have found, however, that most of the reduced fat things are pretty ok. 90% of the time I will buy RF sour cream. Can I tell the difference? Hell yes, but at least it's not gross. Those "faux" meat crumbles have an odd sqeakiness to them when chewed. Kind of like squeaky cheese curds. I'm ok with the meatless meat products as long as you don't pretend they are meat :) They're ok for what they are, but they certainly don't taste like meat.

It's not the fat content that is the problem if "healthy" fat (like avocados, bananas, olive oil, butter) is taken in moderation. Our bodies need a certain amount of fat. The problems arise when all the artificial stuff like sweeteners, margarines, preservatives etc are consumed and most "low fat" or "fat free" products contain such chemicals. The above recipe sounds good, however check the mayo for chemical content.

I agree with many of the posts and disagree with others. For the ones that talk about "eating in moderation" do not know of what they speak!! Many American's do not have any idea of what an actual portion size is. After all isn't everything bigger and better in America. Puleez!! Telling a person who is a adict to food is like telling a person addited to alcohol, drugs or cigeretts to just quit. The only difference is you don't NEED the alcohol, drugs or cigeretts but we all need food. We as American's should stop being so judgemental of everyone and just say
Wow, the recipies sound pretty good. I however wouldn't use (fill in the blank). I thank God I don't have to use (fill in the blank).

Look, these recipes are fine for people who aren't food connoisseurs. As for me, someone who has become a very good cook through experience, I say YUCK! I live to eat, not eat to live. Get off your duffs people and get some exercise!
My eyes almost fell out of my head when I saw the Pea substitution in the Guac! If you put peas in it, then it's not Guac anymore, and mayo doesn't belong in it either. Fat free this and Soy that, and vegi supposed meat are no substitutes, and who's to say the ridiculous chemicals that they put in that crap isn't worse for your body then the original stuff? I've had supposedly the best available vegi burgers and they are disgusting! I also tried the substitute butter. No bueno!
The key is moderation and exercise. I'm sorry, but you people who say that the substitutes are good must have no taste for good food and that's unfortunate. There's no way that any of these recipes taste the same as the real thing. I've tried them too many times and always end up disappointed.

Peas in Guacamole, yuck! And again I say yuck! Did someone forget to read that the fat in avacadoes is good for you? Those of you who can't tell the difference between regular fat and fat free, must have burned off your taste buds with a blow torch. Repeat after me, everything in moderation and nothing in excess.

Does anyone know why!!! the majority of the human population is overweight or obese? Take a look around at how many "buffets" there are to choose from. Your stomach is the size of your fist. If you over-eat it stretches therefore it takes more to fill it the next time. If everyone ate the correct portion sizes we wouldn't have so many overweight people. Our ancestors, for the most part, were not overweight. Let's learn some lessons!!!

A continuation of the email above...I absolutely love guac! I am a 5'4", 40yr old female and weigh 108 lbs. I love to eat and eat anything I want and when I want it, but within MODERATION!!! Putting peas? in a guac is an absolute shame. Avacados are good for you and every BODY needs to have the right kind of fats in their body. Fat is good for your skin, hair, etc. If a person is conscious about being overweight then they need to stop filling their plates 2, 3, 4 times at a buffet and filling their grocery carts with junk food. I like a good piece of cake, creme brulee, sweet treat or chip just like the next person.. but not the WHOLE BAG!!! Come on America, wize up!

I usually make my guacamole with a little sour cream, habeneros or jalepenos, garlic and lemon or lime whatever I have on hand. (I don't use the fat free stuff when I cook, but the light stuff is pretty good!). Its pretty guilt-free because there isn't a lot of the other stuff in it and I don't use a lot of sour cream. Au Naturel!

recipes sound great! cant wait 2 try. it helps to cut corners w fat free items when possible. not everyone can eat REAL FOOD without gaining REAL WEIGHT! keep the lower fat recipes comin.

Check out Carrillo's Fire-Roasted Salsa for a great, all-natural salsa. The stuff is very very good. Website is www.carrillosalsa.com. I tried the Roasted Habanero and the Salsa Verde (medium) as cooking sauces and also as a dip of course, and I'd highly recommend them.

There is a BIG difference between good fats and bad fats....the fat in avocado is all good for you fat, not the kind that sticks to your thighs...So whomever compared avocado to a quarter pounder needs to take some nutrition courses

The only things you need for a healthy and delicious guacamole is avocados (mashed), salsa (stir it right in!) and a tiny sprinkle of salt (or you can leave this out.)

Well to the real food lover if you are a heart patient FF foods taste damn good and if you are worried about staying regular you can always eat prunes. I would rather eat FF than die of cardiac arrest. The average person will die within two minutes of cardiac arrest if they do not know what the warning signs are. Maybe Foodlover and Goo don't care but I do, a cardiac arrest survior!
