Some useful ideas but we have severe food allergies in our house so I can't add tree nuts to anything. I have used the carrots in the sauce trick on my son and he loved it.

Great suggestions..although while Flax seeds add some good nutrition, but I think Chia seeds are even better.
They have higher Omega 3 and 6 levels than flax seeds plus are an excellent source of calcium and other minerals. They don't have to be ground like flax seeds. Plus, chia seeds don't go rancid like flax.
Most people haven't heard of them yet, but there is an excellent article on them at http://www.goodcausewellness.com/chiaseedrecipesgoodcausewellness.pdf . That is also the site that I order mine from (www.GoodCauseWellness.com).

if you cut cup carrots and spinach and broccoli finely, the kids wont notice them in their meatloaf and meatballs. I do it all the time and they dont know the difference. use any veggie you like in the meat...i also tried hungrygirl.com's suggestion and used ground fiber one cereal as the breading for their homemade chicken nuggets, they loved it and did not know the difference either...

three small children - none of which will eat spagetti sauce (only buttered noodles), blueberry pancakes, or esp tuna salad! Unfortunately suggestions will not work for us.

My kids LOVE Edamame (soybeans in the pod). Pick them up in the freezer section. At home we just call them pop ups since you have to pop them into your mouth to eat them. They are very healthy and have a ton of protein.

I will take fresh frozen vegetables and micro them and then blend them into a puree to thicken stews....will also add this to spaghetti sauce. The flavors of these foods are strong enough to mask the vegetables from even the pickiest of eaters :D

Pureed veggies are great to add to sauces or as a layer in lasagna. If you like the taste of sausage, but not the fat add thyme, onion, salt and pepper, and fennel seed to turkey or tofu. I also use whole wheat flour and unsweetened applesauce(in place of fat) in brownies and cakes. Just cut the sugar in the recipe by the amount of applesauce used. My kids can't tell the difference.

My husband has a family history of men dying in their 60's of heart attacks accompanied by huge abdomens. I try to help him by sneaking tofu into things instead of milk or sour cream, mozarella, cottage cheese, etc. He says he doesn't like tofu but has never refused any meal I hid it in. Also, soy milk for more protein.
Smoothies with soy milk. Even soy milk ice "cream" that tastes really good! I sneak goat cheese into things too. I make a mean boiled chicken spaghetti sauce with pinon nuts and shredded carrots. I agree that making your own fresh vegetable puree is much better than anything processed. Vitamens can be added to smoothies as well for kids. A long time ago, Richard Simmons marketed a salad dressing spray! Now another company is trying it and I just laugh. I make my own with lemon juice, extra virgin olive oil - often with herbs in them, rice vinegars, balsamic vinegars with added herbs, other fruit juices, etc. Easy. Experiment.

I mince carrots, zuchini, squash, and other fresh veggies and add them to the sauce and let it simmer 30 minutes. Soy protein crumbles are great too. All of it adds texture so that they don't miss the meat when I choose to leave it out. They LOVE it!

In spaghetti I always use red, yellow, green peppers, and onion ...just chop them up really tiny and noone will know.
Fresh steamed veggies pureed are always better than babyfood...try carrots and spinach...and you'll get so many more nutrients. It's how I trick my husband into eating good without knowing it.
