Low-Fat Fruit Strudel

Let's face it; strudel is normally not considered diet food by any means. However, there is a way to enjoy it with less guilt. This simple recipe is delicious and satisfying -- and only 2 grams of fat per serving! Not too shabby.

When served with morning coffee and juice, it makes an impressive light breakfast for guests. Or serve it as a dessert to dinner guests.

LOWFAT FRUIT STRUDEL
Makes 12 slices

3 cups red delicious apples, peeled and chopped
2 cups pears, peeled and chopped
1/3 cup raisins
3 tablespoons walnuts, chopped
2 tablespoons light brown sugar
1 tablespoon lemon juice
1 tablespoon honey
1 teaspoon ground cinnamon
6 phyllo dough sheets
4 teaspoons margarine, melted


1. Place rack in center of oven and preheat oven to 350 degrees F.

2. In a large bowl, combine apples, pears, raisins, walnuts, brown sugar, lemon juice, honey, and cinnamon; mix well.

3. Spray baking sheet with non-stick cooking spray, set aside. Place 2 sheets of phyllo on a clean, dry surface. Brush the sheets lightly with margarine. Place 2 additional sheets on top of the first 2, and lightly brush with margarine. Top with 2 remaining sheets of phyllo.

4. Spread fruit mixture over the phyllo sheets leaving a 1-inch edge on all sides. Carefully roll the sheets (like a jelly roll) and place on the baking sheet seam side down. Brush the outside of the roll with remaining margarine. Bake for 40-50 minutes or until golden brown.
