Easy Mixed Berry Muffins

Take advantage of the berry harvest while you can. Although this is a straightforward muffin recipe, the berries make it special. For convenience, try preparing the dry ingredients the night before in a zippered plastic bag. In the morning mix in the wet ingredients and smell them baking while you drink your first cup of coffee or tea.

MIXED BERRY MUFFINS
Makes 12 muffins

2 cups all-purpose flour
¾ cup sugar
2 ½ teaspoons baking powder
¼ teaspoon baking soda
¼ teaspoon salt
1 cup milk
½ cup vegetable oil
2 large eggs
1 1/3 cups fresh berries, such as blueberries, raspberries, blackberries, huckleberries, sliced strawberries, or a combination

1. Position a rack in the center of the oven and preheat to 400 degress F. Lightly butter twelve 2 ½-inch muffin cups.

2. In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, and salt to combine. Make a well in the center.

3. In another medium bowl, whisk the milk, oil, and eggs. Mix well and pour into the well. Stir just until blended. Fold in the berries. Spoon equal amounts of the batter into the muffin cups, filling them about ¾ full.

4. Bake until a toothpick inserted in the center of a muffin comes out clean, 15 to 20 minutes. Remove the muffins and serve warm or cool on a wire rack.

    I added one teaspoon of vanilla to this recipe, and when making the muffins with blueberries, I spread butter on the top of warm muffins and then sprinkled cinnamon sugar on them. My granddaughters couldn't get enough of them!

    I'm too fat to go to the store so I had to substitute ingrediants. Bisquick instead of the home made batter, half the sugar, olive oil and soy milk instead of regular. I don't have a muffin tin so I used rambikins. Since my oven is broke, I baked it in my toaster oven and they came out perfect! I ate every single one the same night while being a couch potato. OMG, I love myself!

    Just stocked up on local fresh Tx. blueberries, we put 24 pints in the freezer. Cannot wait to test this recipe.
